Big Jake it’s because she added the water to the powdered mix, not the mix to the water,. Adding the water to the mix that is in a pile created clumps of dry mix, which creates ice crystals and powdery bits within the ice cream.
i am wondering more about the soft serve mixture bags they seem to come in liquid bags and powder bags. I just curious how you make them from scratch. It seems the powder version uses some sort of powder milk/sugar mixture then add water type deal. But not so sure on the liquid premade bags that you load the machine with.
Not sure about bags, but you can buy fresh or UHT cartons or 5L tubs from food wholesalers like booker if ur a business. The UHT lasts about a year and it’s a liquid mix, carton to machine. I use comello atm from booker.
I’m sure you can probably buy the same stuff in bladders / bags as well or you can make your own mix and put it in bladders, idk if booker sell bladders but I’ve bought some from Alibaba before but it’s a min order of like 100-1000/5000
