    Ingredients
    Crust
    1 cup (100 g) coconut flour
    2 Tbsp (25 g) granulated sugar
    6 Tbsp (180 g) unsalted butter, melted
    ½ cup sweetened flaked coconut
    Coconut Cream Filling
    1 tin (400 mL) coconut milk
    1 tin (300 mL) sweetened condensed milk
    6 Tbsp cornstarch
    Zest of 1 lime
    1 cup (100 g) sweetened flaked coconut
    ¼ cup (60 mL) lime juice
    2 tsp (10 mL) vanilla bean paste or vanilla extract
    ½ tsp (3 mL) coconut extract (optional)
    Cream Topping
    2 cups (250 g) fresh raspberries
    2 tsp (5 g) unflavoured gelatin powder, or agar powder
    3 Tbsp (45 mL) cold water
    1 ¾ cups (425 mL) whipping cream
    3 Tbsp (45 g) granulated sugar
    1 tsp (5 mL) vanilla extract
    ½ tsp (3 mL) coconut extract (optional)
    Raspberry coulis, for serving
    Directions
    Crust
    1. Preheat the oven to 325ºF (160ºC). Lightly grease an 8-inch (20 cm) square pan and line it with parchment paper so that the paper not only comes all the way up the sides, but even sits an inch above the pan (this is a tall dessert!)
    2. For the crust, stir the coconut flour and sugar together in a bowl and add the melted butter, stirring until evenly combined - it will be a rough, crumbly texture. Stir in the coconut and press the crumb mixture into the bottom of the prepared pan. Bake this for about 10 minutes, until lightly browned, and cool on a rack while preparing the filling.
    Coconut Cream Filling
    1. Whisk the coconut milk, condensed milk, cornstarch and lime zest together in a medium saucepan and bring this up to a full simmer over medium heat while whisking constantly, until thickened and glossy, about 6 minutes. Remove the pan from the heat and stir in the coconut, lime juice, vanilla and coconut extract (if using). Spread this over the cooled crust and place a piece of plastic wrap directly on the surface of the pudding. Cool this to room temperature and then chill for at least 3 hours before topping.
    Cream Topping
    1. For the topping, remove the plastic wrap from the chilled coconut cream and arrange the raspberries overtop. In a small saucepot, sprinkle the gelatin over the cold water, stir and let set for a moment. Heat the gelatin over low heat stirring just until melted and set aside (if using agar powder, heat this until the mixture simmers, and let simmer a minute before removing from the heat). Let this cool a few minutes, but it can still be a little warm. Whip the cream until it just begins to show signs of holding a peak and, while whipping, pour in the melted gelatin. Add the sugar, vanilla and coconut extract (if using) and continue to whip until the cream holds a soft peak. Dollop this over the berries (so as to keep them in place) and gently spread the cream to completely cover the berries. For a decorative touch, you can use the tip of a palette knife or a pastry comb to create a nice pattern on top of the cream. Chill for another hour before serving (this can be made up to a day ahead).
    2. To serve, lift the dessert out by holding onto the parchment paper, and portion into squares. Serve the dream bars with a little raspberry coulis.

      Are you sure your butter measurement is correct? 6 tablespoons if not even a whole stick but 180 grams is almost double! My base looks way to wet and I’m guessing I was wrong to go with the weighted measures….

    Just found channel, this is 3rd recipe. I'm making this today! I love lemon or lime paired with raspberry and when you add coconut ohyeah. When I was in high school there was a candy bar that was white chocolate and it was filled with either a lemon curd or a thick raspberry and it was so good and I can't find it anymore. I actually made my wedding cake vanilla cake with either lemon curd or raspberry and my frosting because I hate fondant with a passion I had white chocolate fudge. Every so often I actually make a key lime and Berry tiramisu and typically I add some coconut

      I used all purpose flour. I tried to mix coconut flakes to make coconut flour like I had seen before on yt but I found it didn't come out right so I just went for the regular one

      @@zazzooo7 Ah, so glad I read your comment. I just asked another viewer a question about the flour. I'm going to use gelatin in my whipped cream but I have a question. When you added your agar agar was it hot, warm or room temperature? She doesn't make that clear in the video. I'm assuming it's rm temp so it won't melt/deflate the whipped cream but just wanted to check before I go for it...

      @@ohyum Hi Anna, yes it's easy, just do exactly what you do, but replace the condensed milk with Vegan condensed milk (recipes on youtube) its easy with just two ingredients, but make ahead of time. And use Whipped coconut cream (again on youtube, make ahead of time) and Veg Gelatine , oh and replace butter with vegan butter/marg (available from most stores) So pretty simple really and I shall be making this today to try! I actually veganise most of your recipes lol, as I love your creations.       Think about your family health. Listen to BBC news about sugar causes cancer. Not about what is tasty your kids needs to eat healthy food to grow healthy. Even coconut flour is fine but sugar and corn starch and butter because it's not gross feed are not healthy choice .

    Hello Anna, I'm allergic to dairy as well as gluten. Can I use condensed coconut milk in place of the regular? Also, can I stabilize whipped coconut cream in the same manner as you have? Im really hoping so as these look so dreamy! xox
