  • See what we eat in a week and cook with me for my large family a summer sandwich recipe with homemade chips! Summer is HOT and my family really doesn't want to eat slow cooked meals at the moment. I have also thrown in a burger and sweet potato fry recipe along with Peanut Butter Pie!

    Turkey Bacon Avocado Melt
    Sourdough Bread
    Shaved Turkey
    Avocado
    Thin slice Swiss cheese
    HERb Mayo ( 1 cup mayo - 1 Tbsp Fresh Parsley- 2 tsp tarragon leaves- dash black pepper)
    Applewood Bacon ( cooked and drained of grease)
    1 tbsp butter ( per sandwich)
    On sourdough bread spread herb mayo on both sides. One one side add cheese, turkey , and bacon, on the other side add avocado and smush with fork.
    Cook in cast iron on both sides in butter until golden brown.
    Homemade Chips
    3 large russet potatoes cut into thin slices
    avocado oil to cover potatoes
    Kosher Salt & Pepper to taste
    Soak sliced potatoes in ice water bath for 15 minutes. Remove and drain well blotting with paper towels. Heat oil to 350 degrees and place potato slices in. Cook until golden brown 8-11 minutes.
    Place on parchment paper to drain season immediately with salt and pepper.
    Burgers
    Night Before
    Sourdough hamburger buns
    4 cups flour
    1/3 cup active sourdough starter
    1 1/2 - 2 cups WATER ( not milk like I said sorry!)
    1/4 cup honey
    dash salt
    sesame seeds
    1 egg ( for wash)
    Add all ingredients into mixing bowl with dough hook attachment. Either use dough hook to complete kneading or use hands to knead until dough bounces back when pushed when formed in a ball.
    place in greased bowl and cover with damp towel or proofing cap. Place in a cool place for 6-12 hours.
    Once risen divide into halves and then each half into 3 giving you 6 buns.
    Form into balls and place on sheet pan lined with greased parchment paper.
    let rise 1-2 hours.
    Scramble egg in bowl and brush onto risen rolls, and add sesame seeds if desired.
    Bake 20-25 minutes at 375 degrees or until golden brown.
    Patties
    2 lbs ground beef
    1 Tbsp each of Garlic Powder & Onion Powder
    Salt & Black Pepper to taste
    Avocado oil
    Season meat and combine well. Form into patties making a small dip in the middle to help the patties from shrinking. Heat skillet with avocado oil and brown patties flipping often making sure meat is cooked all the way through. Takes about 10-12 minutes on medium heat.
    Assemble Burgers
    Sourdough Buns
    Mayo
    MAPLE bacon (cooked)
    Beef Patty
    Lettuce
    Tomato
    MORE MAPLE bacon (cooked)
    Red Onions
    American Cheese
    Mayo
    Sweet Potato Fries
    3 large peeled sweet potatoes sliced into fry strips
    Avocado Oil to cover fries.
    Mix in Bowl
    2 tbsp garlic powder
    1 tsp onion powder
    2 tbsp smoked paprika
    Kosher Salt & Pepper to taste
    Soak fries in ice water bath 15 minutes. Dry very well and place in oil that is heated to 350 degrees on stove top in a large deep skillet. Take out when potatoes are just changing color let rest for 5 minutes on parchment paper. Return to oil and cook until golden brown.
    season to taste.
    Peanut butter pie
    3 cups whipping cream
    1 cup powdered sugar
    Mix in mixer or with hand held mixing tool until stiff peaks are formed
    into separate bowl add in.
    8 oz cream cheese
    1 1/2 cups peanut butter
    3/4 cup powdered sugar
    2 tsp vanilla extract
    & cream together until well blinded
    mix in 3/4 whipped cream slowly.
    add in chopped Reeses Pieces or your peanut candy of choice
    in an OREO pie crust pour mixture in and chill for at least 20 minutes
    Ganache
    1 cup or 8 oz heavy cream
    8 oz semi sweet chocolate
    add in bowl together and microwave in 30 second intervals until chocolate is melted and there is a smooth silky chocolate mixture.
    Let cool for 10 minutes then add to chilled pie. and chill for 10 mintues.
    At last pipe remaining whipping cream on pie and top with your choice of peanut butter candy, like Reese's, butterfinger, or peanuts. Enjoy!

    Gosh, I'm sitting here enjoying the quiet at 1am and wanting that turkey sandwich SO bad ❤😂 I wish I was a good bread baker, all yours is so pretty

      it is VERY GOOD. A local bakery sells it but they use roasted red peppers instead of sun dried tomatoes but I didn't have any. Almost everything I come up with is trying to make a restaurant food I want at home!

      I agree. I have read recipes and cooked since I was like 11 and I read it with an H so that is how I say it. I get made fun of for it...but the silent H makes no sense!
