I'm a huge fan of Bernachon chocolate, and I tried Le Roux when I was last in Paris in October 2023 but I've gotta say, there's a little chocolatier in Cahors (46) called l'Eclat du Noir which is easily the equal of anything I've found in Paris, or anywhere else for that matter. (Genin still makes my favourite caramels though!)

Very pricey but yummy and the shop is beautiful. Just like you say, a jewelry store. But, hmmm I don't ever remember seeing caramels... Further afield in Versailles is Au Roi Soleil. If possible, I would like a lesson on how to eat gourmet chocolates. One often sees lessons on how to appreciate a good chocolate bar, or how to go about appreciating the colour, scent, and tastes - both dominant and secondary notes of wines or whiskeys. However, I have never seen such a video for filled truffles, bon bons, nor chocolate covered items like ganache, pralines, fruit rinds, marshmallows, etc. How does one ensure that one makes the best sensory experience for oneself - something that will help one remember?
