I made this last night for a house full of guests. It turned out so incredibly delicious! Thank you for sharing these excellent instructions. The rice was not as fluffy as I was hoping for. I suspect I either cooked it too long or there was too much liquid. Would love to hear any tips on how to achieve light, fluffy rice.
Really appreciate the systematic way you explained and listed everything! But my small suggestions: You gotta try the katche ghost method. That’s the fun of cooking this style of biryani. Can try with chicken first , trust me that you will not be disappointed 😊
Also please do more long form with your biryanis series - it’s much much easier to get most things right. For example what you said about washing the rice to stop further cooking - would have never inferred it from your shorter videos

You have to be very very careful with stone flower, yeh poora ka poora taste kharaab bhi kar sakta hai, aur dhungar jab dete hain toh dhunghar ke saath milkar iska taste bhi overpower ho ke biryani ka ya qorme ka poora taste khraab ho saktaa hai toh stonevdlower ki quantity ko control main rakhe aur dhungaar ke timing ko.
You can say like restaurants , you mean restaurants don serve good food. you get platform with chefs, you call your self chef, atleast don be negative about restaurants…irony is anyone can wear chef coat and call themselves chefs.

I am from Hyderabad we make it on regular basis . We never add stone flower , mace , nutmeg , bay leaf ..rest looks good
I am also Hyderabadi from Pakistan, we also made it on regular basis, never use nutmeg.

Add rice in boiled water,after 80%rice cooked remove from the water and wash and rinse in cold water

Dont wash the rice after cooking with spices. It washes away majority of flavour. Istead cook the rice until it is 80 percent done.
These is not Authentic hyderabad biryani .The meat will cook on dum and wr don't have 2nd marination
