I like eating the sweet peppers dipped in roasted garlic hummus.
15 minute vegetable lo mein
INGREDIENTS
8 ounces lo mein egg noodles or spaghetti noodles
1 tablespoon olive oil
2 cloves garlic, minced
1 onion, thinly sliced
2 cups chopped broccoli
1 bell pepper, julienned
1 carrot, julienned
2 cups cremini or button mushrooms, sliced
SAUCE
2 tablespoons soy sauce, or more, to taste
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste
INSTRUCTIONS
Boil noodles according to package directions, then drain and set aside.
While noodles are cooking, heat olive oil in large skillet or wok over medium high heat. Saute garlic and onion together for 2 minutes, then add broccoli, bell pepper, and carrots. Saute for 4 minutes, then add in sliced mushrooms. Saute another 2 minutes.
Whisk together all ingredients for sauce, then pour over top of vegetables, stir, then add in cooked noodles and toss to combine.
Serve!
Please please try gardien products! They are absolutely delish.. the chicken products are by far the best but they also make delish burgers & meatballs! I know "fake meat" make most people gag but truly they are amazing ❤️ never hurts to try! I bet if you made your girls the chicken fingers or chicken burgers they would have no clue they were meatless
Bean tostadas, rice “burrito” bowls, veggie stirfry with noodles, hummus and veggie wraps, veggie lasagna or breakfast for dinner meals are my go to’s for meatless meals.
We used to do "meatless mondays," but haven't in awhile. I should bring it back to my meal plans. A favorite recipe was cheese enchiladas. You really can't go wrong with that. We all love cheese enchiladas and, since it's only once a week that we went meatless, it's not like we got tired if we had it every meatless day :)
We do red beans and rice, pasta (its easy to do meatless just sub mushrooms), veggie quesadillas (heb has a frozen bell pepper blend that’s super easy) do a breakfast for dinner nights and do pancakes, or potatoes and eggs, pizza (again veggies). There are tons of ideas on Pinterest.
We do one meatless meal each week as well and typically I do soups like broccoli/cheese, potato, bean soup, etc... we also do like veggie pizza or build your owl salad bar night (without meat, but do have beans)

Breakfast for dinner is a good meatless meal. Also 3 bean and veggie chili.
We do meatless meals alot and not because we try to, it just comes natural because my hubby does not eat meat and my kids are not big meat eaters either. So I don't cook a ton of meat at home. Just easier to make meals everyone will eat. My hubby does eat fish so we do fish dinners 2-3 times a week. I do a lot of pasta dishes with salads on the side. And then a lot of vegetarian dishes like zuchinni curry, cabbage, lentils, beans, rice, etc.
I do a lot of meatless meals since I was vegetarian before marrying my carnivore husband. Easy meals are breakfast for dinner, falafel with pita and hummus and Greek salad, Mediterranean wraps with hummus and roasted veggies, bean burritos, veggie pizzas, grilled cheese and tomato soup, lentil soup with crusty bread. Isa Does It is a really good cookbook if you want something more elaborate meals.
here are some suggestions to meatless mondays..vegetable soups, bean burritos, cheese quesadillas, one time I made a potato pie and had gravy to top it with a salad and garlic bread..they loved it..eggs, mushrooms, and cheese are meat substitutes..some nights you can make some bomb ass omelets with fried potatoes and toast..hope this helps and good luck to ya
A good thing to do for a no meat night is to have omelets. You can have all kinds of veggies and cheese in the omelets. My favorite is avocado and cream cheese, another favorite is pears and Brie cheese.

I have had a look at what you buy and I thought you might like sweet potato and red bean burgers which made in advance can freeze the recipe it versatile and can be used as a veggie ball stroke mini Pattie to fill tortillas
I boil/ steam sweet potato’s and mash them adding onion powder garlic powder black pepper pinch of salt coriander fresh and some cumin powder ..I dice a red onion also a zucchini some sweet peppers and some grated carrot and a tin of red kidney beans or you can use any mixed beans you like I mix it altogether and add breadcrumbs to combine the mix to hold firmly you can then freeze your burgers or meatballs etc... or oven bake for 30 mins for around 30mins at 150 for burgers great served in a bun with cheese slice and some homemade potato wedges and salad if made in to meatballs great served on seasoned pasta and made in small patties put in tortillas with cheese placed in an oven dish baked with tomato pasta sauce and sprinkled with cheese served up with salad and avocado...
Another easy recipe is pea and mint soup boil a bag of frozen peas in veg or chicken stock add onion,, salt ,,pepper ,, when boiled blend with hand blender add some cream or sour cream and serve with fresh crusty bread hope this give you a few ideas

I usually have one week of four meat days and 3 without . Alternative having one week 4 meatless meals and three with meat. I keep simple . Lentils soup , rice and beans , sopa de fideo , potatoes or beans tacos with lettuce tomato cheese and sour cream are some that I like to make

tip for the brown rice, use broth instead of water. It makes it taste so much better.
We love vegetable lasagna. I'd take that bag of mixed veggies & use it as if it were ground meat, then layer the noodles, my ricotta & mozzarella with an Alfredo sauce & bake. My kids love it. They also love fish sticks, so we have fish stick tacos with lettuce, tomato, cheese & ranch sauce, or any topping you like. They love eating them that way. I also take cans of biscuits, press them flat for mini pizza & have some chopped veggies & cheese to add as toppings or press them over the back of a muffin tin & bake to make biscuit cups. You can put all kinds of things in them, but my girls love scrambled eggs & cheese in them for dinner. Stuffed french toast is good too for dinner. I spread both sides of the bread with some softened cream cheese, add their favorite jelly & put the slices together to make the sandwich, then soak in your egg mixture & fry. The inside gets soft & it's really delicious.

I went from eating meat and dariy everyday to a vegan, and in my opinion it's easier to cook now than before and I have a bigger range of foodchoices. I am very happy with my decision, you and your lovely family should most definitely try some!

I stuff the mini peppers with artichoke and spinach with goat cheese.
I just made vegetable soup the other day. Fed 3 adults in my household. Plus was able to give a large container of it to my sister. Souper😁 cheap and easy to make. Also do lentil soup now and again. Great Northern Beans and cornbread. All time favorite meatless dish is Rice with black beans topped with shredded cheese, salsa, sour cream.
Plate tacos or as we call them Haystacks. Corn chips with everything you would put on a taco. But we use only beans no meat. UNLESS we make chili. Then we use some for the Haystack meal and left over chili for another meal.
I am not a fan of those mini peppers. The skin always seem to be a bit tough. Larger ones are always tender and juicy.
Those peppers are sooooo good! We love them. We put them in stir fry, salads, eat them alone, put them on top of rice, you can incorporate them into many things.
Love your videos! I giggle every time I see a grocery haul from another country because we call kiwis kiwifruit. When I hear kiwis I think that people are going to eat us hahaha we call ourselves kiwis 🥝

The mini peppers taste amazing if you stuff them with feta cheese!
You can the mini peppers with chicken or tuna salad my kids love them that way!
We use a lot of frozen chicken breast because they are cheaper & I’ll I’ll make this win the oven and cover them with Colby jack cheese and mushrooms. You can get a bag of frozen chicken breast at Aldi. I know it’s not a meatless meal, but it’s a cheeper meal.
I'm a vegeatrian( since I was 7) but my family all eat meat. The only meat free meals I can get them to be happy with are potato soup topped with cheese, I love to make pots of pinto beans in the crockpot and we eat them with tortillas or tortilla chips, sour cream , hot sauce and cheese or you could be traditional and make fried potatoes and cornbread. Taco soup without the hamburger meat is also a great option. The key is having beans bc they are filling. Chick peas are great on salads and eggs are filling as well. Oh and bean burritos with all the toppings.
We do breakfast food one night a week. So, we have kale and spinach scrambled eggs with protein pancakes. My almost 3 year old loves the kale and spinach scrambled eggs!
Nothing better then mini peppers and hummus!! Yummmyyyyy! My kid loves it and she is so picky. And I also make a light chicken salad and use the mini peppers halved as eatable vessels.
I joined Slimming World about 2 years ago and I have never bought a jar of pasta sauce since. I now use a carton of passata and Italian herbs and seasoning. It’s far healthier for you, very tasty and much cheaper. The jars of sauce are loaded with sugar. Great haul. X
You can use portabello mushrooms in place of a hamburger and put them on a bun. They are really good with BBQ sauce. Or sometimes I will put them in the oven with an egg cracked inside. For the mini peppers I like to stuff them with ground sausage and put some cheese on them; then I bake them till done.

Hi, just came across your page and subscribed. I am in shock at a pack of 36 eggs. I'm English and we can buy - wait for it - a pack of 12 eggs. Though if you don't mind eating caged small eggs you can get a pack of 15. We have no big packs of anything because the policy of supermarkets in the UK is keep us coming in as often as possible. My go to meatless dinner is bean and cheese chalupas. It is insanely cheap especially if you make your own beans and fry your own chalupa shells! 3 ingredients and very very tasty.

I do a lot of plant based meals for me, my family doesn’t always enjoy that lol. I get almost all my recipes on Pinterest. You can find anything on there! Great haul!!
Love your videos. I cook mostly chicken to be honest and very little beef, maybe once per week. I rarely buy pork but we do like pepperoni pizza once per week. Chicken is the most reasonably priced meat and so many things you can do with it. Soups, fried chicken, chicken and rice, mexican casseroles with chicken, chicken salads. My cholesterol was 158 and I am not a small person. Also once per eeek I like tuna or salmon patties or salmon burgers. I hope that helps a little with your meat budget.
You could do a cheese tortellini or ravioli! My kids love those and I always have a pack of either on hand since its a simple meal. Also with those mini sweet peppers, my favorite way to eat those is to slice them down the middle length wise, and put either strawberry cream cheese or regular cream cheese in them and cook in the oven til theyre soft... Sooo goood!!!

You could do a vegetarian soup. Which I will be looking for a recipe myself for it.
My family loves peppers I make a Greek salad with mine I use cucumbers red onions red or orange peppers and feta cheese and a Greek dressing and it’s so yummy! Or I cut up peppers and onions and potatoes and put oil on them and cook them in the oven!

Homemade vegan crunch wraps. They are very good and very inexpensive. You can also add sour cream since you're not vegan (or just buy the vegan sour cream, thats what I did 😀) and salsa on the side.

I have an amazing baked ziti recipe if you want it. You make your own sauce first and then the next day you can make the ziti. It’s an easy recipe but it Has to be followed exactly as written because cooks illustrated scientifically tests their recipes.

During lent we don’t eat meat on fridays. Good meal ideas are breakfast for dinner, cheese raviolis, minestrone soup, big salads with beans or other protein other than meat, bean n cheese burritos, veggie burgers, tostadas, veggie fried rice. Lots of great options.
I wish we had a HEB in the Tyler area.

Your hubby should try the salsa verde from the Taco Bell condiments. Usually it’s right next to the normal Taco Bell sauces (like what you bought!) it’s not as “salsa-ie” as the La Costena, but it’s got a great flavor. I LOVE the tomatillo salsa, but for some reason it’s missing that “extra” something for me! I guess you can’t get better than homemade! :)
Meatless tacos 🌮 are great my boyfriend will eat them too. If you like mushrooms just sub it for your meat add taco seasoning jalapeños or peppers of your choice and fixing you like delicious and easy
Bean Burgers and fries are amazing, cheap and super easy.
Potatoes and white beans with onions, just oil in a pot and everything, and season with garlic powder, salt and pepper, add water to cover potatoes, and Italian bread to dunk in the juice when done. You can add sausage and cabbage also😋 I don't buy red meat anymore with all these recalls, just chicken until that's recalled. Pretty soon we're not gonna be able to eat anything thanks to our government

Wow, cheap food out there! Here for a whole chicken it's $14!! We usually roast a whole chicken every Sunday for dinner with vegetables and gravy. We don't eat much beef at all - my mother told me that your body doesn't digest beef - it basically just rots in your gut, ewww, that sounds nasty, but I have always found beef really heavy in my stomach. I eat mostly chicken, pork or fish. Thanks for sharing, xo.

Just cook your usual only without the meat. That's what I did when I went vegetarien. Salad and Tacos are just as good without the meat. Greetings from Germany

Soyrizo! It’s a non mean chorizo. The same brand of chorizo you bought makes a soy version. Taste just as tasty but no meat.

3 cans Goya dark red kidney beans
1 yellow onion
1pack sticks of celery
Diced up carrots into small cubes about a cup
White rice
Munster cheese
.. fry up veggies (not the beans)
Use for seasoning :
Salt
Pepper
Garlic pepper (don’t be shy)
Lil bit of Paprika
Add the beans after other veggies are cooked full get them to a almost over cooked place like brown the beans then add white rice mix all together shut stove top off add the Munster cheese a lot lol and mix on the hot burner until all melted... let settle till room temp! That’s important! Then enjoy!
