  • Slow smoked steaks on the Pit Boss Pro Series 1100....Smoked steaks for 1 hour on the smoke setting, then turned up to 350 degrees until internal temps reached 135-140 and ate dinner

    Hey. I figured out how to make the temperature gauge to work. U know the cloth like washer that’s in between the barrel and the smoke stack. I used the same kind of material and made a washer and installed it in between the door and the temp gauge. Works just fine. Smoke don’t leak out. Works great. I’m also gunna make a thin strip and glue it on the inside of the door so it’s flush on the barrel. They make a glue for it. Then no smoke at all will leak out.

      Thanks for the info......going to try my better temp gauge this weekend with one other mod i am going to do to it and see how it works......

    Well done buddy!! I mean medium rare for me. Haha. Good video. I’m waiting for my pit boss from Lowe’s to come in. They go out of stock as soon as they come in. I’m going to purchase me a better more advance thermometer for mine from watching this video. Love all the input!! Waiting for you to do a pork butt. That would be amazing!!

    The probe on grates may show higher since it is lower. Get a oven themometer to set on grates to see if it matches the electronics.

    Just got me a pit boss. Can't wait to cook on it. Work out of town Right now it's riding around with me until I get home. Me and my wife love watching you videos. Have you ever cook lamb chops? I been want to try some. Never ever try lamb before. Thanks from SC too.

      Have done a few different ways.....just go to my page and search for lamb....one in the instapot and one in the masterbuilt smoker.....haven't done one on the pit boss yet.....but hope to soon.

    You could also wire the probe for electronics on the manual probe to check and see if it will change to read the same

    I just did a couple frozen filets last night. Straight from the freezer to the grill. Sear in each side about 3-5 minutes until they brown, then move to the left side set at 350 and let them come to 125. I will never thaw another steak.

    Why not use the slide sear feature on the pitboss? I like to cook my steaks to 110 then pull them off for about 5-7 min of rest time then use the sear function of the grill. It gives it little extra flavor of the flame grilled taste. Try basting them in some kinda of butter when you flip them. I like Chef Shamy Garlic Butter. Can get it from Sam's. It's a game changer.

      yea i am surprised that some people don't really care for the sear option when its the big feature that separates the pit boss from the other pellet smokers. i don't use the sear option for things like ribs, brisket, etc.. but for steaks and burgers definitely!

      Yep, I noticed this too. He didn’t do a real sear. Need to open the slider and get flame on that meat. 30-60 secs per side will do it.
