First time I had this was back in the 80's at Ted Peters in St. Pete. They served is as an appetizer. I've made smoked cod dip before and it turned out great, but I had to soak the cod in a brine before smoking. Do you not have to do the same with mullet?
This man/chef knows EXACTLY what he is doing. This is the very same recipe to the "T" my grandmother taught my mom, who taught me (except we used Louisiana Hot Sauce.) It was pure joy watching everything from smoking the fish (we always favored mullet) to correctly guessing what the next step would be, to perfect presentation. Good job & well done!!! Thank you

I dry brine them with salt and sugar for 30 minutes. New video coming soon using the same method on jack crevalle.
