I'm indonesian, Chef. The answer is yes, however different parts of Indonesia has different kind of flavor profile. Come to my City Chef, Medan the Gotham city. Flavor and street food is something special here.
I am from central Java with Sumatranese blood and I agree. Prefer Medan over Jogja anytime... Central Java is so sweet... Better try Balinese or Madurese. Oh and not just street food, but also village food over fancy restaurants. In remote mountain villages and even jn the jungle you'll fjnd amazing food that local citizens don't know about. Look where people have the least money and look the happiest and often strongest.

@@Darkshizumaru whats helpful is how he explains things and offers feedback, honestly I never grew up being even allowed to cook, so for a lot of stuff, it's felt like learning a second language at a later age in life instead of growing up bilingual, there's world view and perspective that isn't formed to get a natural feel for things, and when he explains his thoughts and how things could be done better he's sharing the perspective of a professional chef.
Chef James, you do know this is one of the older videos between them and Gordon has since won his uncle title back and also met up with Nigel Ng several times including on 2 of his shows. So to say this video is old is an understatement.

Your body doesn't care how the sugar comes, it's all sugar. Unless it's fructose, if it is coming in as a liquid monosaccharide (juice, soda, etc) rather than bound up as sucrose, then your liver gets hit hard (fructose is toxic and the liver has to hurry and convert it to glucose or palmitic acid. Brown sugar has that hint of molasses flavor which is a great addition to certain dishes. Side note, glucose is not sweet, fructose is. This is why pure glucose forms like maltodextrin and dextrose do not overly sweeten what it is added to. Also, they are pure glucose and spike the hell out of your blood sugar, but aren't required to be added to the sugars in the nutrition label (at least under FDA rules).
Maltodextrins are a family of glucose polymers, and dextrose is simply another name for glucose. Not all maltodextrins are processed the same way by the body though. For example, resistant starches are non-digestible maltodextrins.

7:20 I've got a similar issue, no problem eating shrimp, mussels or virtually any other shellfish but my throat goes dry after i eat lobster. And I was born in Newfoundland, Canada. How horrible was mother nature to me: surrounded by fresh lobster (arguably the best in the world) and I can't eat it. 😥

As an Indonesian, I can confirm that sometimes street food is better than fancy restaurants or even five-star hotels. Especially traditional Indonesian dishes like rujak, tahu tek/tahu telur, pempek, gudeg, rendang, and the whole Padang dishes, babi guling, etc., no hotel or fancy restaurant can beat authentic street food or family-owned restaurants. All those professional chefs/cooks learn from international cooking schools or fancy courses; they don't teach them how to properly make Indonesian food, just like what Gordon showed in this video. In his Indonesian fried noodles, he uses udon instead of mie telur/kuning (egg noodles); he added bacon, but most Indonesians are Muslim, so authentic Indonesian fried noodles do not contain pork. In terms of authenticity, any random US$1-2 fried noodle street vendor here could beat Gordon. Even though Gordon's may taste better due to higher quality and more ingredients.
However, as a foreigner you can get really sick as the street vendors do not follow hygiene guide rules and the bacteria in their foods are different then the ones in our food. We've been to Indonesië last year, and though the street food looked tasty, the stalls also seemed unhygienic and having also been warned we didn't dare try it. Must add that we also got sick from the restaurant food anyways...

The other three wanted to play it safe and got bad food poisoning from a restaurant. The bacteria are the same, and don't assume restaurants are cleaner (and don't assume locals don't get sick, they do).Same thing when I was on tour with my band in Shanghai. I found trustworthy locals and ate everything they ate. My bandmates got sick from restaurant food. It's not where, it's who you're with.
Also, overcomplicating bami/nasi goreng misses the point. Culinary is not just the senses, but also the mind. The charm of simple people's food is creating something great from a few ingredients. Everybody understands the oxytocin rush when your grandma or her pembantu has made something amazing from some leftovers. Jazz is great but this is blues.
Goreng is "fried" in Bahasa Melayu and Bahasa Indonesia. Just combine it with anything like Nasi (Rice), Mee (Noodle), Ikan (Fish) or Ayam (Chicken). Just note that unlike English, you say the item first. For example, Ayam Goreng, which would mean Fried Chicken.
Indonesians write/say Bakmi(e), or mie or sometimes mi. Never "mee". The anglicized version "mee" was probably popularised in Malaysia where the British ruled for a long time.
11:54 - I personally use a HexClad pan, and I absolutely love it! One of the main reasons is how easy it is to clean due to its hybrid construction of stainless steel and nonstick technology. Unlike traditional nonstick pans, HexClad pans are designed to be scratch-resistant, even when using metal utensils, which makes them far more durable over time. I also find that HexClad provides better heat distribution, ensuring more even cooking. This is because it features a tri-ply construction: a stainless steel outer layer, an aluminum core for heat conductivity, and a patented laser-etched nonstick surface. This unique combination eliminates hot spots, which can sometimes occur with standard pans. Previously, I used a Tefal nonstick pan, specifically one from Jamie Oliver’s range. While it was good, I found that over time, the nonstick coating began to degrade and scratch, despite careful use. It’s worth noting that Tefal pans often have thermospot technology to indicate when the pan is preheated, which is helpful, but they don’t match the durability and versatility of HexClad. Interestingly, HexClad pans are also oven-safe up to 500°F (260°C), making them highly versatile for recipes that require stovetop-to-oven cooking. They’re compatible with all stovetops, including induction, which adds to their appeal. While HexClad pans are a bit of an investment upfront, their longevity and performance make them worth the cost for serious home cooks. On a side note, I also have one of Jamie Oliver’s cookbooks that I got for free.

And if not - they'll have a frying pan)) I know more about streetfood in Thailand than in Indonesia. In Bangkok there's actually a streetfood resturant with a Michelin star. (Jai Fai) So you have the full spectrum. From the very good to the bad. I expect the same to apply to Indonesia.😀
Well, as Chinese-Indonesian I can tell that there're plentiful amount of street foods in Indonesia ranging from stir-fries into sweets (Some of them might overlap with Malaysian / Singaporean, but nonetheless still quite distinctive like frequent usage of kecap manis). Also, in my lifetime I never used udon because it's more pricey in here & egg noodle is already enough for mie goreng.
Another Indonesian here, Chef. Yes, most of street foods in Indonesia taste usually better than foods in restaurants and they are remarkably affordable. For example, here in Jakarta, you can get a nice serving of Nasi Goreng or Mie Goreng for around IDR 15-20K (USD 0.93-1.24) from a street food stall while you can get Nasi/Mie Goreng in a restaurant with half or less the serving amount for at least 3-4 times the price. Well, yes, there's nothing wrong on buying foods in a restaurant, it's just the economic factor of it. The taste is not that much different besides the street foods one are usually a bit saltier. I'm Indonesian and the answer is YES, Indonesia street food is that GOOD. Locals will always prefer street food rather than fancy restaurant, because it's cheaper and the taste is way better. You can find good food just by go to random street food vendor, sometimes you dont have to go anywhere the vendor will come in front of your house, like Fried Rice, Fried Noodle, Sate, and many more throughout the day even at 3 a.m in the morning you can still find them.

This made me miss my orange and white tabby… she was with me 20 years, though, thanks to lots of agility training together, cultural growth through music since she liked to match pitches and sing along with me which was endearing to no end, and great food and solely drinking bottled water since cats tend to hate the taste of chlorine and such in tap and all the pipe residues and fluoride in particular are bad for them. Best boss I ever had. Glad to see you looking great after your surgery! Nice to have you back!

Indonesian street food is one of my favorites. It's actually where the majority of the population actually eats from. They have little cart/stalls we call Kaki Lima (meaning five feet for the 3 wheels and two feet of the person pushing the cart). Gado Gado, Ketoprak, different fried treats, and even mie goreng is sold at these stalls. Absolutely delicious. I do have to warn you that if you do go, go to the ones that locals go to frequently as some might not be as great or clean.

I was in indo several times mostly to hang out with friends or for some events, and yes, street food is fantastic, maybe would be unusual for western taste, but its just great. From stir fries, to even soups and different pastries etc. Very diverse and tasty cuisine, really recommend.
Also, home ranges don't have the same intense heat as restaurant burners. Home gas is typicallt 10-15 000 BTU, asian restaurants often have 100-150 000 BTU power burners. Or now they have very powerful oval induction ranges. At home, it's better to stir fry max 2 small portions per batch. Too much ingredients will lower the temperature of the pan/wok and steam fry rather than stir fry. Also, the reason why restaurants toss the food is because of the high heat. The food must be constantly moving in the wok, or else the dragon flame will burn the food. On home ranges there's no need to toss as much. Personally, I stir ingredients around cause the much needed heat and toss to mix in the sauce.

I was in Indonesia 35 years ago - in Bontang and Lhokseumawe. From what I see in photos on the internet it is a MUCH different country today. Back trhen it was straight third world and even the skin and bones street dogs wouldn't eat the street food. You could get gold cheap, though. Many props to the Indonesian people for how far they have come in so short a time. Great to see.
When not terrible for you sugar costs the same or cheaper than terrible for you sugar, corporations and people will buy more of the former. Doesn't matter if we agree with that rational or not but that's reality. Thanks for coming to my TED talk.

It could be that America is too young to have a cuisine (though cynics would give fast food hamburger and chicken joints the honor). But, there is regional cuisine in the US. Cajun and/or Creole in Louisiana for instance. Various shellfish items in places along the Eastern seaboard (Maryland, Rhode Island, Maine, for instance). Pennsylvania Dutch foods. Even, if you think about it, New York and New Haven style pizzas. I don't know enough about the western half of the country (yet) to provide examples there.
whenever we go back to visit family in malaysia the only time we go to a restaurant is when the whole extended family gathers for a meal and then we rent out a banquet room. outside of those occasions we just eat street food. laksa for breakfast, nasi goreng for lunch, char quay teow for dinner.
James- you should come to Australia. You’d be surprised at the range of ingredients we can get. I’m in a small city/town and we can get almost anything -other than a good Laksa.
Bourdain's cookbook collection would have been different, to say the least... You'd probably find some french cookbook from the sixties, right next to an old notebook he found in some Italian antique shop. All setting the perfect decor for scrambling an egg... XD

I've never been to Indonesia, but as an American, and former chef i can vouch for the street food in Thailand and the Philippines! I want to ask, as a chef, what is your honest opinion of hexclad. There are so many mixed reviews on it.
3:00 Asian Street food can be really good, there are tons of markets all over these countries serving food. To me, it's similar to the "Food Carts," in cities or the "Food Trucks," that are over cities and certain random areas across the USA. It's just people who cannot afford an actual building rent, with seats and all the stuff you expect from a sit down place. These people can set up shop on the street, or they have a little place in a building that isn't sit down, that serves food to people from a window facing the street. Having a place to sit down, bathroom, etc is a lot of space, room, and additional work. Just being able to cook food and collect money is so much easier for many people. Street Vendors are very popular for this reason, and markets become huge for this reason. There is also a massive market difference in other countries compared to the USA, where you can buy regular produce, meat, etc, instead of a store. It's a similar concept to the food markets, and many times they are combined into one giant market. I actually just recalled my brother is over in Germany enjoying the Crhistmas markets there.
Ohhh for sure, here in Indonesia, street food is the best, but yeah the restaurants are not bad at all, the food is delicious and the place is nice, but please try the street food if you come to Indonesia...
Glad you’re back from your surgery. As far as whisks are concerned, I have 2 metal cylinders on my counter. One has my whisks, rubber spats and is lined with tongs. The other has large spoons, ladles and the rest of my spatulas. I have a drawer with small tools. The ignorance is bliss comment made me lol. 20+ years ago I ran a pub kitchen. Half the menu was traditional American fare and the other half was Tex Mex. I had a group of students from a nearby art college as regulars. About a year in they called me over to their table to tell me how amazing my beans and rice platter was. They were all vegan and mine tasted the best. The rice was made with the stock from braising the chicken used in tacos and burritos and the beans were fried on the flat top after cooking the day’s bacon. I just said thanks as nothing was labeled vegan on the menu.😈😂
The only complaint I have about the removal of highly refined white sugar from carbonated beverages is that the replacement is high fructose corn syrup, which is way worse.
I'm Indonesian and yes most of Indonesia street food is that good. And FYI if you come to Indonesia, there are a lot of cultures in Indonesia, you will find unique food some people didn't know, and if you eat Rendang or Nasi Goreng or Mie Goreng in one place, it will taste different at other places, it's still delicious though because we have our own taste preferences. and if you really learn about Indonesia ingredients, you can learn unique things about our ingredients, like what I learned recently is shallot, there is shallot cooking and there is shallot to make fried shallot and many more.

Turkey bacon is sadness, so I’m actually surprised we haven’t seen Jamie Oliver use it yet. Must be harder to find in the UK.

Indonesians write/say Bakmi(e), or mie or sometimes mi. Never "mee". The anglicized version "mee" was probably popularised in Malaysia where the British ruled for a long time.

11:54 - I personally use a HexClad pan, and I absolutely love it! One of the main reasons is how easy it is to clean due to its hybrid construction of stainless steel and nonstick technology. Unlike traditional nonstick pans, HexClad pans are designed to be scratch-resistant, even when using metal utensils, which makes them far more durable over time.
I also find that HexClad provides better heat distribution, ensuring more even cooking. This is because it features a tri-ply construction: a stainless steel outer layer, an aluminum core for heat conductivity, and a patented laser-etched nonstick surface. This unique combination eliminates hot spots, which can sometimes occur with standard pans.
Previously, I used a Tefal nonstick pan, specifically one from Jamie Oliver’s range. While it was good, I found that over time, the nonstick coating began to degrade and scratch, despite careful use. It’s worth noting that Tefal pans often have thermospot technology to indicate when the pan is preheated, which is helpful, but they don’t match the durability and versatility of HexClad.
Interestingly, HexClad pans are also oven-safe up to 500°F (260°C), making them highly versatile for recipes that require stovetop-to-oven cooking. They’re compatible with all stovetops, including induction, which adds to their appeal. While HexClad pans are a bit of an investment upfront, their longevity and performance make them worth the cost for serious home cooks.
On a side note, I also have one of Jamie Oliver’s cookbooks that I got for free.

I know more about streetfood in Thailand than in Indonesia. In Bangkok there's actually a streetfood resturant with a Michelin star. (Jai Fai) So you have the full spectrum. From the very good to the bad. I expect the same to apply to Indonesia.😀
Well, as Chinese-Indonesian I can tell that there're plentiful amount of street foods in Indonesia ranging from stir-fries into sweets (Some of them might overlap with Malaysian / Singaporean, but nonetheless still quite distinctive like frequent usage of kecap manis). Also, in my lifetime I never used udon because it's more pricey in here & egg noodle is already enough for mie goreng.

Yes, most of street foods in Indonesia taste usually better than foods in restaurants and they are remarkably affordable. For example, here in Jakarta, you can get a nice serving of Nasi Goreng or Mie Goreng for around IDR 15-20K (USD 0.93-1.24) from a street food stall while you can get Nasi/Mie Goreng in a restaurant with half or less the serving amount for at least 3-4 times the price. Well, yes, there's nothing wrong on buying foods in a restaurant, it's just the economic factor of it. The taste is not that much different besides the street foods one are usually a bit saltier.

I'm Indonesian and the answer is YES, Indonesia street food is that GOOD. Locals will always prefer street food rather than fancy restaurant, because it's cheaper and the taste is way better. You can find good food just by go to random street food vendor, sometimes you dont have to go anywhere the vendor will come in front of your house, like Fried Rice, Fried Noodle, Sate, and many more throughout the day even at 3 a.m in the morning you can still find them.

This made me miss my orange and white tabby… she was with me 20 years, though, thanks to lots of agility training together, cultural growth through music since she liked to match pitches and sing along with me which was endearing to no end, and great food and solely drinking bottled water since cats tend to hate the taste of chlorine and such in tap and all the pipe residues and fluoride in particular are bad for them. Best boss I ever had.

Indonesian street food is one of my favorites. It's actually where the majority of the population actually eats from. They have little cart/stalls we call Kaki Lima (meaning five feet for the 3 wheels and two feet of the person pushing the cart). Gado Gado, Ketoprak, different fried treats, and even mie goreng is sold at these stalls. Absolutely delicious.
I do have to warn you that if you do go, go to the ones that locals go to frequently as some might not be as great or clean.
Still not as good as an Aussie servo pie though.

I was in indo several times mostly to hang out with friends or for some events, and yes, street food is fantastic, maybe would be unusual for western taste, but its just great. From stir fries, to even soups and different pastries etc. Very diverse and tasty cuisine, really recommend.
Also, home ranges don't have the same intense heat as restaurant burners. Home gas is typicallt 10-15 000 BTU, asian restaurants often have 100-150 000 BTU power burners. Or now they have very powerful oval induction ranges. At home, it's better to stir fry max 2 small portions per batch. Too much ingredients will lower the temperature of the pan/wok and steam fry rather than stir fry. Also, the reason why restaurants toss the food is because of the high heat. The food must be constantly moving in the wok, or else the dragon flame will burn the food. On home ranges there's no need to toss as much. Personally, I stir ingredients around cause the much needed heat and toss to mix in the sauce.
I learnt how to unhook bras one-handed when I was 17; a very useful skill.

I was in Indonesia 35 years ago - in Bontang and Lhokseumawe. From what I see in photos on the internet it is a MUCH different country today. Back trhen it was straight third world and even the skin and bones street dogs wouldn't eat the street food. You could get gold cheap, though. Many props to the Indonesian people for how far they have come in so short a time. Great to see.
When not terrible for you sugar costs the same or cheaper than terrible for you sugar, corporations and people will buy more of the former. Doesn't matter if we agree with that rational or not but that's reality. Thanks for coming to my TED talk.

I discovered your channel a couple of weeks ago, and I've already watched DOZENS! I love your style! Thanks! One thing though - As far as I know, American cuisine isn't that well known? Why? (Or am I wrong?)
It could be that America is too young to have a cuisine (though cynics would give fast food hamburger and chicken joints the honor). But, there is regional cuisine in the US. Cajun and/or Creole in Louisiana for instance. Various shellfish items in places along the Eastern seaboard (Maryland, Rhode Island, Maine, for instance). Pennsylvania Dutch foods. Even, if you think about it, New York and New Haven style pizzas.
I don't know enough about the western half of the country (yet) to provide examples there.
whenever we go back to visit family in malaysia the only time we go to a restaurant is when the whole extended family gathers for a meal and then we rent out a banquet room. outside of those occasions we just eat street food. laksa for breakfast, nasi goreng for lunch, char quay teow for dinner.

I've never been to Indonesia, but as an American, and former chef i can vouch for the street food in Thailand and the Philippines! I want to ask, as a chef, what is your honest opinion of hexclad. There are so many mixed reviews on it.

3:00 Asian Street food can be really good, there are tons of markets all over these countries serving food.
To me, it's similar to the "Food Carts," in cities or the "Food Trucks," that are over cities and certain random areas across the USA.
It's just people who cannot afford an actual building rent, with seats and all the stuff you expect from a sit down place. These people can set up shop on the street, or they have a little place in a building that isn't sit down, that serves food to people from a window facing the street.
Having a place to sit down, bathroom, etc is a lot of space, room, and additional work. Just being able to cook food and collect money is so much easier for many people. Street Vendors are very popular for this reason, and markets become huge for this reason.
There is also a massive market difference in other countries compared to the USA, where you can buy regular produce, meat, etc, instead of a store. It's a similar concept to the food markets, and many times they are combined into one giant market.
I actually just recalled my brother is over in Germany enjoying the Crhistmas markets there.

As far as whisks are concerned, I have 2 metal cylinders on my counter. One has my whisks, rubber spats and is lined with tongs. The other has large spoons, ladles and the rest of my spatulas. I have a drawer with small tools.
The ignorance is bliss comment made me lol. 20+ years ago I ran a pub kitchen. Half the menu was traditional American fare and the other half was Tex Mex. I had a group of students from a nearby art college as regulars. About a year in they called me over to their table to tell me how amazing my beans and rice platter was. They were all vegan and mine tasted the best. The rice was made with the stock from braising the chicken used in tacos and burritos and the beans were fried on the flat top after cooking the day’s bacon. I just said thanks as nothing was labeled vegan on the menu.😈😂

The only complaint I have about the removal of highly refined white sugar from carbonated beverages is that the replacement is high fructose corn syrup, which is way worse.

I'm Indonesian and yes most of Indonesia street food is that good. And FYI if you come to Indonesia, there are a lot of cultures in Indonesia, you will find unique food some people didn't know, and if you eat Rendang or Nasi Goreng or Mie Goreng in one place, it will taste different at other places, it's still delicious though because we have our own taste preferences. and if you really learn about Indonesia ingredients, you can learn unique things about our ingredients, like what I learned recently is shallot, there is shallot cooking and there is shallot to make fried shallot and many more.
