    only you could make this heart look delicious. Does heart tense up and become tough if you cook it too much?

      The peruvians def have been doing this way before me! awesome stuff. tbh i have only cooked them to rare. We have grilled deer heart and overdone it - towards like 160 and it has been a disgusting rock. But I think it will start to break down post 195 degrees. Might be worth trying a long low and slow cook. This may be a cook sous vide test
