      After salting? Until the salt is absorbed. Usually an hour does it. Once you apply your rub you can smoke right away. I usually put it back into the fridge to relax before I run it but it’s certainly good to go

      On the pellet grill, it works surprisingly well. Better than just running at 400. Highly recommend trying it out!

      Absolutely. The rub here is just adding flavor, not doing anything to improve the skins crispiness.

    I’ve got this exact smoker and thinking of smoking turkey breast roasts (the frozen ones wrapped in the netting). Any tips for smoking those on the OG Grilla.

      I have a video somewhere on smoking turkey breasts. But in general same methodology as a full bird. Defrost it. brine it. apply your rub and start smoking at 180 for an hour or so. Then bump to a higher temp and pull it around 155-160. Oh and add butter towards the end of the cook!

      I haven't injected in quite a while to be honest. a 24 hour brine will do the same thing and is a bit easier. I would be careful injecting those frozen birds. They might be frozen in a brine solution. If so, your best bet is to either just cook them without added salt, or wet brine so that equilibrium gets your salt level right. Injecting salt could be a problem

      The peruvians def have been doing this way before me! awesome stuff. tbh i have only cooked them to rare. We have grilled deer heart and overdone it - towards like 160 and it has been a disgusting rock. But I think it will start to break down post 195 degrees. Might be worth trying a long low and slow cook. This may be a cook sous vide test

    Followed this today. Mine smoked 3 hrs at 180 and hit 155. Wrapped in paper and only increased the smoker temp to 225. It hit 200F in 1:45! Checked with another thermometer and pulled it and put in a cooler. Sure hope it isn't over done.

      I'm sure it'll be fantastic! the trick is the probe test, if its like butter that's when I pull it it. The rest will definitely help it relax and improve tenderness. Its going to be great!

    I think smoking a chuck roast is so much better than smoking a brisket. Unless you're cooking for a large group, a chuck roast is a great option. So much more of the meat is exposed, so you get much better seasoning and smoke penetration.

      The lowest setting on mine is “smoke” which is about 180 degrees.

    Ive never had any bird more exotic than turkey. They look super easy to make and your recipe looks delicious. May have to give these a shot.

      Duck, pheasant, quail, grouse are my fav, in that order. I hear the sand hill crane is superb but I haven’t made it down to Texas to hunt one yet

    There's a poultry shop here in Austin where you can actually buy anything that has feathers. I luv getting a case of quail during the holidays. Very delicious! nicely done bro!

      Love that. There’s only one spot in the Boston area I know of that had “exotics”. And it’s insanely priced. I don’t do a lot of quail hunting - mostly pheasant so it’s always awesome to get some

      I tend to toss a few wood chips on the charcoal as I cook, so I’m with you for the little bit of smoke. But he burger sauce is a family favorite. Highly recommend

    I love cooking burgers on my pellet cooker. I have a traegar ranger and it came with the grated grill but it also came with a cast iron flat grill top that you can interchange.... it's fantastic 😊😊 you know how to cook a burger Ben 😊😊it looks perfect 😊

    If any one is wanting to try a Vortex, Run to your local walmart. Its on its 2nd clearance markdown for the end of summer. $13.50! I just picked it up because i didnt want it for the $40 price tag. But i'll take a chance for $13.
