Made these yesterday for my grown kids, they loved them, they commented on the complexity of flavors in the bbq sauce. One thing I will change for sure next time is to deseed the chipotle peppers. The solids left over after straining were filled with seeds…had to toss it and just made so caramelized onions to replace it. My 5 yr old grand daughter loved the cilantro mayo just squirted on her bare hotdogs….she ate three!
This brings back fond memories of “Los Perros Locos” - an eatery on the Lower East Side of Manhattan, since closed, which served chorizo with similar toppings. The “Chimi Churi Chori” included a cilantro mayo, crushed potato chips and a chipotle sauce. Magnificent!

You can get "new england" frankfurter buns in some stores. Like a loaf of bread cut like buns for toasting. I use garlic/herb butters Trick to perfect dog's/brats. Put cold dog's/brats in cold water. Bring to boil, boil 5-7 minutes. Grill. They will plump and snap, no matter the brand. Hint for small kids. Cut in to pieces b4 putting on bun to avoid choke hazard...
When I was in Chile, I was introduced to the "completo Italiano" which is a hot dog with avocado paste, salsa, and mayo (ketchup and mustard are optional). It's already much tastier than a standard hot dog, but I'd be interested to see what you do with that as a base

I sold 1/4 (110g) pound Dogs on 8" Hoagie Rolls & made some very different Dogs :) Deli Dog with Swiss & Slaw, Angry Dog with Ghost Pepper Cheese & Spicy Ketchup, Sub Dog with Provolone Cheese Lettuce Tomato Onion & Italian Dressing, Reuben Dog with Swiss Kraut & Russian Dressing plus more :)
I don't believe I can call these just hot dogs after this recipe Sonny! Your crisscross technique is fabulous and the roasted peppers elevate the simple pepper to smokey rich flavor. Combine your Chipotle sauce and wow! Bravissimo! You are an amazing chef and Hilarious Kung Food Master!
My favorite was the costco Polish with sauerkraut, onions, relish, mustard, aaaaand yes, ketchup.... That steamy bun goes a long way and the flavors were always yummy... 😋👍🌻

Sonny, just made this last night. But I kinda went off script. Ended up buying chipotle pepperjack brats and pineapple brats. Made the peppers (fantastic!!!) Had my own pineapple habanero bbq sauce at home. So skipped making the chipotle bbq. Made the cilantro mayo. Results? Epic

Dude adds green parsley to green cilantro for the green color. Definitely going to try that BBQ sauce. Unfortunately most of my family can't stand any real level of spice so it will just be for me.

These look awesome however, I am a Rigid, Traditional, Stubborn Headed, Properly Raised Fella. First of all, the Ketchup (shudder) Covered Hotdog is absolutely a Zero/Ten or less. Totally Subjective, and Absolutely True - Top Split Buns, Hebrew National Quarter Pound Beef Franks, Brown Mustard (Guldens), Sweet Relish and Minced Onion are the only things needed to have a marvelous Hotdog experience.
