    RoseRed Homestead channel scientifically tested the Instant Pot Max canning function and it operated perfectly. She used the same device, inside the canning jar, that Utah State uses to test products and processes. She is also degreed in food science, so I trust her. Yes, you can safely pressure can in the Instant Pot Max (the Max only) and Presto Digital.

      @@who6339 The digital readout show the exact internal temperature. Mine has always been above the required 240. 245-248.

      I saw that video as well and I do trust RoseRed . She's very cautious and would never approve something she wasn't sure of. I have an IP max. Haven't used it yet, but plan to soon.

      @@1989peytonsawyer I use the Ball Blue Book that I had for years. It is a great starting place for water bath canning, pressure canning, freezing and dehydration of food. From that book so many other books will offer a world of wonderful options. But The Ball Blue Book is the bases you want to start with. I hope this helps. I am gearing up for another wonderful season of food processing. And preserved foods not only feed your family, they make wonderful gifts. HAPPY Food preservation!

      She tested the Instant Pot Max. She said absolutely, the Duo was NOT safe to can in. She gave a thumbs up to the Max, as it has all the correct canning features.

    What about the Instapot Max? It has altitude, pressure and time settings. I've seen several folks do canning of meat in the Instapot Max.

    You are right you don't pressure can in a pressure cooker that's why the Instant pot Max has a pressure canner function and the others do not. RoseRed Homestead did her research and good explanation on the digital canner and specified not to get pressure canning and pressure cooking mixed up.

      WELL, ARE YOU ONE OF THE PEOPLE WHO DOES THEIR BEST TO DISCOURAGE PEOPLE FROM PREPARING FOR THE WORST THAT THEY GOING TO DO TO US THIS WINTER?
      I do not totally trust those people who are putting poop in our food these days, and trying to do us in.
      I have a small and medium Instant Potatoes. They Pot. I have a Canning Button. I have been using them for over 5 years. I have canned Tomatoes, Potatoes, Green Beans, Salsa, Stews, Butter, and family recipes. Not one has gone bad on me yet. I think I will stick to my instincts instead of their know it all instincts. Stop scaring people.

    Rose Red Homestead did the actual research using the correct temperature logger device which tracked the temperature throughout the process.

      So thankful I read the comments and found yours. Now I'm leaning toward the instant pot max canner instead of the nesco and THEN i see that Presto makes one as well, but it's a lot more &than the instapot. Rose red's videos are AMAZING.

      I also saw her video and I'd also say with her research I now consider it safe. BUT it has to be an Insta pot MAX. A regular insta pot won't work! I have both and I wouldn't consider pressure canning in the regular insta pot!

      Red rose added a correction that the presto has NOT been approved by USDA

      @@chasemcintosh1091 because the USDA doesn’t test or approve canners. The Presto Precise meets their guidelines and that’s all Presto wrote.

    Our electric pressure canner has a canning button and a weighted gauge. What's the thought on that kind of machine?

    I'm higher altitude. I have to have a dial gauge to know I'm doing it safe. Good message.

      The IP Max does let you set up for 5000 feet. That is the altitude where RoseRed Homestead lives at and she tested it with a special thermometer inside one of the jars.

      She also did Testing the Nesco Smart Canner.

    Please up date your video. The manufacturer of Instapot states that the 6 quart has a psi of 11.6 and I never can anything that needs over 10 psi. The newest ones are pressure rated at 15 psi if they say pro on them ans pre the manufacturer (called today 18 July 2022)

    🤷‍♂️ Per my steam table we only need 10 psig (25 PSIA) to reach 240°F. I'm confident in the 10.2 psig advertised minimum pressure on the high setting.

    But the new insta pot max specifically has canning feature. I assume it uses the same technology as the new digital pressure canners. I understand your preferences for dial and weighted pressure as it’s tried and true simple and safe. I don’t know if I’d be comfortable using the digital for canning either, but I can’t believe insta pot would promote it if they weren’t fairly certain it was safe.

      It is even better than the canned that you have to put on the stove and it works very well. I am sure the 2 or more generations before me would have been very happy with this product.

    Read your IP manual. My 8 quart Duo can pressure can-the temps and pressures are listed in the manual.

    Presto has an electric pressure canner with the USDA approval. Something worth exploring

    I sealed sauerkraut 5 years ago in an instant pot. 7 minutes 2 jars at a time. No issues. The kraut is still good.

      Sauerkraut is quite acidic around 3.5 and does not need to be pressure canned just water bathed.

    My question is can you just cook the food putting in a jar and put in a pressure cooker or is there a special way you cook your vegetables or whatever your canning and then pressure cooking

    I'm so glad this video is what it is. I've just spent £200/$270 importing a Presto Canner to the UK which arrived just a few days ago. That is a lot f money I don't really have but thought of it as an essential bit of equipment. I would have been upset if it turned out to be safe to use an InstantPot. Can get them for a third of the price I just spent.

      The ONLY instant pot that's suitable for pressure canning with is the Instant Pot Max and it has a very limited capacity. I'm in the UK too and saving up to get a Presto Induction.

      I have a Presto Precise electric canner. You will find yours a safe and versatile canner that has a maximum pressure canning capacity of 14 half-pints, 7 pints, or 4 quarts. In addition, the Presto Precise will water bath can 7 half pints or 7 pints. I only use wide-mouth canning jars. The ease of use makes canning a delight, and I wish you the joy of yours.

      It has been 3yrs - how has the Presto Canner worked out for you? Interested in starting here in the UK to bulk buy and preserve food, maybe even eliminate the fridge/freezer !

      @@stewartdahamman Yes it's good. Still have food I canned just after I bought it. I think I am over cautious having had a few jars that fail. When sealed, I lay them down on the draining board for about half hour and again upside down. But I have 2 wardrobes full of food. I am also extra vigilant when opening just in case because I use normal Jam Jars and they don't always have the "popper" on the lid.

    I wrote IP and their pressure sounded good for my area.
    Just to be safe I put "IP" on the top of the jars to remind me to boil the contents for
    10 minutes to be extra safe.
    It's nice to just can 1-3 qts in my IP when the need arises.

    But is it possible to use it for water bath canning if you are simply using it as a large pot? Not with the instant pot lid but just a regular lid?

    Not so fast on "not knowing what temperature your jars are coming to." Watch the Red Rose Homesteads video "Pressure Canning in the Instant Pot Max." She is a College Professor and her video will shock you on how she tests the Instant Pot Max.

      I watched Red Rose Homestead and she is great but she has the data log which records the temp every minute.And she is so knowledgeable. She also said she was not trying to convince others to use the instant pot for canning because they may not have the same conditions as she. She quibbled about the price of the data log but didn't tell us how much it cost. She also was able to talk to the scientists At the LDS about their tests on the instant pot. I love my Presto Digital canner and I trust Presto that they tested the canner fully just like the manual canners I have used for years. I do not plan to take any risks with my family.

      @@kathrynanderson9266, I love my Presto Electric pressure canner, too, and my Instant Pot Max. I looked up the price of the probe and it was not cheap. It worked like a charm at her high elevation. My elevation is much lower than hers thus I have no problem with any of the data she collected. I fully trust her findings and my canners!

      PV=nRT... Boyles Ideal Gas Law...
      V, n, R are all constant in this case... therefore the relationship between P and T is linear... Elevation will make a difference this will be the most important unknown and must be taken into account to be safe...

      Go watch Red Rose Homestead. She's a biology professor and has done a video with a wireless digital thermometer in a electric pressure cooker with minute-by-minute pressure readings proving that the Presto electric canner and the instant pot max are safe for pressure canning.

    Manual states 11# on instant pot. At sea level where I live that’s perfect. Very small batches, 3 jars max.

    In the manual for my instant pot it says this as well. It says that it isn't a steady pressure and is not safe for pressure canning.

      It is only the instapot Max that can be used for canning.

    Hi sorry this may be a stupid question but how come you have to can things at a higher temperature in order to not get botulism, but when I make let's say soup/broth/whatever and just boil the meat in water (so I don't get the temperature as high) it's safe to eat?

    I am old school and will only use my pressure canner I don’t trust the new stuff, plus if power goes out I can still use my pressure canner to can up my meats b4 they spoil

    I know RoseRed advocates for using the Max but I only trust a manual weighted pressure canner. Regular pressure canning isn't hard. It's like people who complain about "lye soap" being harsh. When you understand the how's and why's, there's no fear. No canning with digital for me.

    But how the grandmothers did it withow the pressure canning Machine thing?
    ,because I remeber vagely my grandmother boiling the cans and stuff ,but she did not own a pressure canning ,How did she knew ? Sadly she has being gone for to long and I can't ask those questions.But nobody never got sick ,people will come over to do it with her to learn because her stuff never went bad .I wonder ?

    Thank you! I have been really thinking about an electric pressure cooker. One of the things I was hoping to do with it was small batch cunning. I guess I will just spend the money on a little better crock pot instead.

    You can steam can in an instant pot just like a water bath . Many more things can be waterbathed look for Amish recipes. The Amish don’t pressure can . :)

    Old school gauge and weight are working together to tell you we match so its all good .with electronics you have to rely on calibrations which you cannot check .

      Why is there such fear in digital? When you go to the doctor and they digitally check your blood pressure do you trust it? Or if a digital machine puts medication in your arm when you're in hospital do you trust it? Or your car tells you how fast you're going. I mean this is 2022 people. What you fail to understand is not everybody can afford all American or can use presto stove top canner. Oh and people say well your electricity goes out you're not going to be able to can. You're not going to be able to can on your stovetop if your electricity goes out unless you have gas. Your logic makes no sense.

    I don't think Carolyn has the IP Max....hers looks like the regular IP, one not the one with the canning feature...which is what you need. I just purchased one on sale, after Pam at Rosered said there was a sale on Amazon. Can't wait to try it.

      You are right, Sonya, she has the exact same one I have in her video. The Duo. I since bought the Ipot max after RoseRed Homestead because it has the canning feature not just pressure cooking. I like that she used a sort of metal device right in the jar with the food that recorded the temperature all through the process. Pretty cool.

    Does anybody know if I can use my All American pressure canner to water bath can as well, or do I need a separate one for water bathing?

      You can water bath in any pan that is tall enough to cover your jars with a couple inches of water. If you have a canner that is tall enough, you can use it.

      Yes you can water bath in a pressure canner. Just leave the lid unlocked.

    I guess that's a common question, though wouldn't a company market "canning" as a function of their pressure cooker, such as the instant pot to make more sales if it was safe? they would find anything and everything to put on a box, unless their legal department stepped in.

    you are incorrect about on stovetop canning
    It’s been done for years and years in pots with boiling water
    I use all 3 methods for years and even tried the oven method one time and it worked fine

    I only have an instapot, can I can pickled items? I just need to use up an abundance of zucchini, and pickled zucchini are the best way to eat them imo
