In the 1950s when I was a boy I used to have lunch at Mrs Williams in San Fernando. Always remember her amazing stew chicken, the best part of which was the red beans!!
This looks delicious! I made stew chicken for lunch with dumplings, but seeing this video, I'm craving it for dinner too! lol
🌸 remember peeps Shanty’s pot had nearly 2 chicken portions and as you can see she is cooking large portions for lots of people
When you cook for your household, portion the ingredients accordingly
So do not copy her salt, sugar portions etc
Sugar by the way in oil changes to browning and is no longer sweet, because cooking it till it frothy, golden makes it browning
I hope this makes sense, which is why stew stays savoury and you do not taste the sugar
For those that have never cooked or tasted a stew made like this I hope this helps you understand
But why not try a recipe for yourself and see
Do note you need to Brown the sugar properly 😊

I make my stew the same exact way.i don't use soy sauce n ketchup.alot of ppl in this generation have to use alot soy sauce for color n set of ketchup that does have the meat sweet.if u know how to brown sugar properly u don't need soy sauce.
