Southern Chess Cake

- Here's an easy, sweet, delicious dessert that comes together in no time at all!
Southern Chess Cake
1 box yellow cake mix
4 eggs
1 stick butter, melted
1 8oz package cream cheese
1 tsp vanilla
1 lb box powdered sugar
Pre heat oven to 350 degrees
Using an electric mixer, combine cake mix, one egg and melted butter. Mix for two minutes, scraping down as needed. Transfer cake mixture to an ungreased 9x13 baking dish. Push mixture down to cover entire bottom of baking dish evenly.
Put cream cheese in mixing bowl and mix until smooth and fluffy. Add three eggs, vanilla and powdered sugar. Mix well scraping down bowl as needed. Pour cream cheese mixture over cake mixture in baking dish and smooth evenly over entire surface.
Put in 350 degree oven and bake for 35-45 minutes, or until top of cake is golden brown. Remove from oven and cool completely on cooling rack. Cut into squares and serve.
This is just like Gooey Butter Cake from my home state of Missouri.

We call it Ooey Gooey Cake.( TN/VA) My friend calls it "Yummy Dummy Cake" cuz it's a simple recipe and I think maybe it's also a jab at me.🤔 I've noticed that Missouri recipe in a church cookbook before is the same thing.

I can't tell you how pleased I was to see you back in the old Detroit kitchen again!! Seeing the old 1963 Westinghouse terrace top range really warmed my heart!! Please make some more episodes at home and in Ralph's kitchen also! So many wonderful memories, almost like going home again! The pistachio pudding cake was one of my favorites by the way!!

Oh my yes….coconut! You could also use lemon extract to get a wonderful feeling of the islands.

@@cavalcadeoffood Please consider doing more! The kitchen studio space is great, but I really like the older episodes filmed in your home and especially at the cottage. You just can't reproduce the look and feel of those videos. They are, like I said, like going home again!

Had to do a double take on this one as one, the kitchen was way too familiar and thought you were "re-airing" and older episode, and two, I'd forgotten that you still had this house, but had sold the cottage to finance the house up in Coswell. One of my favorite kitchens was the vintage one at the cottage. Anyway, Ralph's is great too in its vintage glory. Anyway, this cake looks good..

Your chess cake recipe is spot on. I love making this I like to use different flavors of cake mixes like lemon, strawberry , butter or red velvet cake mixes work well.

Great! As much as I love classic mixers. … kitchen aid is always the gold standard. In this case literally. lol. Their dishwashers used to be good before Whirlpool ruined them. Miss Hobart!

Looks delicious! Ralph’s research on the name was interesting too. I always seem to bake when the mood strikes so nothing is ever at room temp. Maybe that is why my things never look as nice as yours.
Hi Peggy! It does help to have ingredients at room temperature. You can bring eggs up to temperature by covering them with water that's lukewarm for about 5 minutes. Things like butter and cream cheese really need to soften by sitting out for a while. Thanks!

This has elements of so many things. It almost looks like a souffle, even though there wasn't whipped egg white, etc. BUT THEN!! You get the top crust that's like brownie skin from the eggs/sugar doing their magic. I am SO making this soon! Thanks, food friends!

When I moved to South Carolina, I wanted to learn how to make all the Southern classics, but this one and banana pudding have become my go-tos, and this is exactly how I learned it here! Speaking of "greasing" the pan (or not) though, did you know that in some parts here, people voice the "s" in "grease" when using it as a verb? It tickled me so much when I heard a friend from western North Carolina do that that I started saying it that way around the house, and both my boys picked it up! Hahaha

Also on a side note regarding ovens running too hot or too cold, I remember once reading that a good way to kind of even out the heat and possibly eliminate hot spots, is to place a pizza stone on either the floor of the oven (if gas) or directly on the heating coil (if electric)

Hi John! Kitchen Aid called that color "Majestic Yellow." What made it majestic I'm not sure about, but I got it when I remodeled the kitchen and painted the walls yellow. That mixer has been a good friend! Thanks!

Oh, how lovely to see you in this kitchen again. And this looks like a nice recipe. Chess cake? Never heard of it. At first I thought it was a punn on cheese cake. Since you put cream cheese in it.
I'll make a study how to make the bottom from scratch. For we don't have those box mixes in the Netherlands. And besides that, I prefer to make things from their basic ingredients 😊. (I even mill most of my own flours...)

I keep it covered with plastic wrap in the refrigerator. But I think it tastes best at room temperature. Thanks!
