I played and loved both. For my personal taste, The Witcher 3 was better, I had more fun and immersion playing The Witcher 3. But, I have to say RDR2 is way better in technical aspects.
That's why it's a good game. Advneture Open World games are not that enjoyable if you just go straight to main missions and complete the story witihn 2 days.... You prob haven't played any games like Witcher 3 since you are saying u couldn't finish it because you couldn't keep up with story.... some of the side missions lock/are no longer able to be played when you reach finale. It's not a bad game just bad taste in games

As a person wjo has played both games, I can say that the witcher 2 is even much better than rdr2
the witcher 3 is better at everything that is not related to physics. lore and ambience is superior in witcher 3, also the music

"You have to play random missions to keep up the story", actually you can just play the main mission and forget about the "random" side stories.
