I used to be a butcher myself 40 years ago, and could do all of this in just under 2 minutes. Now, I don't even know where to start anymore. BTW we cut our hams a little differently in my country. We follow the muscles (seams) and don't cut straight through them like you did when removing the femur.

not that much really.... they just had them on sale at Fortino's and they were averaging around $45,, not bad and you end up with a lot of meat.... but yes you have to know a little to take it apart yourself,,,, or just pay a friend to do it for you...lol
