你好👋可能油溫控制方面出問題,起初用攝氏160,炸至浮起,如果太高溫的話,外皮被炸硬,便膨脹不大,撈起後很易回縮的,我的蛋球留至第二天也很堅鋌呢!你可以跟著我的方法,一步一步做,一定做到靚靚炸蛋球的,謝謝支持👍😊❤️

用了雞蛋
很西式泡芙一樣,因為以煮熟後加奶油(牛油)受熱後麵糰裡面油溶化,產生熱氣,所以裡面會空心有氣泡
道理跟泡芙一樣,不過炸完後那些油就不好用,因裡面有奶油成份煮菜不好用
我好細個食係用糯米粉去整嘅,傳統係用糯米粉去整.而家好多都係用麵粉去整

你好👋這個沙翁是用多油炸,才會膨脹大起來的,否則用少油來煎,出來的效果便會如你所說,很快便會扁蹋下來,不能持久哩!我炸後的沙翁,樣子都可以維持到第二天,我再用小型焗爐翻焗,祇是外面掛的糖溶化,但外觀也不錯哩!至於麵粉要煑幾耐,大約一分鐘左右,祇要將材料完全混合,成糰便可以了,取出後灘涼少許,才可以加入雞蛋來攪拌混合!如果想再做的話,請再重溫影片,了解清楚明白每一步的程序再開始動工,會事半功倍的!謝謝支持👍😊❤️

麵粉筋度是因小麥疍白質多少而分
中筋粉一般叫粉心粉適合做饅頭,包子,高筋粉因疍白質比較高所以做麵包,低筋粉疍白質低做餅干因不會容易出筋,所以疍糕不能用高筋粉
