Stephanie Castellanos especially lesser known Latino foods!!! My family’s Puerto Rican and everybody I’ve ever fed one of our traditional recipes (pasteles, arroz com gandules) to has been blown away by how they never knew of such amazing food!
As a Mexican, it was so unbelievably sweet of him and I really appreciated that he cared so much. It was so cute 😫

I watch all of these other cooking shows and I feel so incapable of creating the recipes because the chef is so professional. Julien makes me feel like I can do anything and I love that. I binge watch his videos and am seriously considering going vegan because of them.

Hey Julien! Great first try!! It's kinda hard to make when you don't have someone there teaching you. Next time put the maza wider on the corn husk, put the filling in the middle, and then a little more maza on top. Then fold one long side in, then the bottom wide side in, and then the other top wide side down, and then the longer side. You can also leave the top open. To hold the corn husks closed better, either peel a couple thin lines of corn husks like you did by accident and use it to tie it closed or get non dyed string. When my family and I steam them in the pot, we put them in standing up long ways around the pot. Usually cooks 10 to 12 at a time depending on the size of the pot. You don't want to stack them cause the seam won't go through all of them correctly to get that moist softness. Also if you want to make it spicy, there are some amazing smoked rojo chili sauces out there. You can put a spoonful in the middle with the filling and/or leave it as a "dip" or topper when you peel them and eat them. Love your videos!!! Your friendly dink, datboywiththepurplehair!❤

Hey, Julien. I wanted to give you a heads up that some canned refried beans have lard in them. This brand uses pork lard. I learned this lesson the hard way, myself. :(
Look for refried beans that have other oils or oil free, and you should be safe.

This is important, even for those who aren't vegan. My mom's side of the family is Jewish, but not strictly kosher. We don't eat pork though, and we found out years after eating refried beans that the majority of them have pork lard. Now we just make our own.
Yep. Pork lard is a common seasoning for many Mexican foods. 😕 While I’m not vegan/vegetarian or Jewish...I have a condition called Exocrine Pancreatic Insufficiency(EPI) which means my pancreas no longer produces ANY digestive enzymes. Which are what your body requires to breakdown any & ALL carbs, protein & fat. So since lard is just pure fat...even with prescription replacement enzymes (which ironically come from pigs) I have to be VERY careful how much fat is in any food I eat if I don’t want to get extremely sick & risk triggering an episode of pancreatitis. 😕 Plus protein is really hard to digest as well. Especially animal protein. Thus I’ve actually ended up eating a lot of vegetarian dishes and substitutes as they are easier for me to digest. But...corn in ANY form is VERY difficult to digest so a lot of recipes like this...along with a lot of Mexican food...is now off limits. Which absolutely SUCKS as I LOVE Mexican food & corn in general. 😭😭

It's easier being kosher while vegan because all vegan food is kosher (that I know of anyway), so he's enjoying that aspect. :)

I showed my grandma this n for sum reason she got happy n said “Mija can you ask if he will help me make some this year” guys.. my grandma makes 175 dozen tamales a year... starts from Halloween till thanksgiving we eat about 25 dozen then till Christmas we have all the rest to eat ... it was my 18th bday last month on the 25th.. My family is big so we usually make like hundreds because we also have to give some to our neighbors and people we work with. If I can smell tamale prep when I walk in, I know I have to reschedule plans for at least 5 hours

When people get so excited talking about their traditions and celebrations or cooking with their family their excitement is infectious, and I feel like the only rational response to that is to also get excited and to ask if you could be a part of it. Tamales look so frickin delicious. My grandpa and his family left Russia and Germany in ww2 and when he came to Canada he was ashamed of his culture because of the atrocities that had been committed. When he was older he started to make more of the food he had growing up. He passed away when I was little, but we still have days where my family makes homemade pierogis, borscht, fish head soup, sauerkraut, cabbage rolls, and sausages.
I love the comments in this video, everybody getting excited for all their cultural dishes and family memories
every year, my family has a “tamale party” in the middle of december. family and friends alike come over and we make them assembly line style, for the entire day. it’s a labor of love, but in the end we end up with about 50 dozen tamales, everyone taking gallon bags full home to eat and freeze to have throughout the year. it’s such a special time, and i’m so happy you’re giving love to a food that gives me such comfort (:

a few tips are--
spread the masa on the husk thin, put in the filling, then fold it over so the filling is inside and use strips of corn husk to tie the bundles together so they won't open!

hi! as a mexican vegan i really recommend giving sweet tamales a try. They're the only vegan option at christmas dinner with my family, haha. They usually have no filling, you just add sugar to the masa mixture and usually some sweet chopped fruit like pineapple or cranberry and cinnamon.

Great first attempt! Tips from someone who has made tamales every year since I was born (35 years)
- hot liquid in the masa helps the oil stay melted, for my vegetarian sister we use Crisco which is just vegetable oil.
The masa should be more like soft peanut butter and you spread it like you would on a sandwich.
Make sure you look for the correct side of the husk, one is smoother and will make sure your tamales slide off the husk when cooked.
My family only folds the bottom and steams them bottom down.
The beans should placed in the middle after you spread the masa so when you wrap it the beans will be covered.
Try a slice of roasted green chili, a spoon of canned corn and cheese wrapped inside.
Also get helpers! It makes it so much easier and more fun.

as for someone who literally just learned how to make tamales , you did such a great job 🥺🥺 but it’s better to make the layer of the masa kind of thin just to let the filling shine through and the masa to give it flavor and not be too dry, especially because they are bean tamales so it can get kind of dry. It’s also less messy with the filling inside of the masa instead of the outside ! it’s definitely something that takes time. You should try tamales de rajas but just substitute vegan cheese, they are the bessst

Tamales aren't a one shot thing. They often get taught over years by family. The masa should get spread thinly with the back of a spoon across the bottom half to 3/4 of the husk. Filling placed in the middle then one side folded over the filling and then the other side folded on top of it. I think your recipe had too much liquid versus oil and butter and we usually add adobo sauce to flavor the masa. I'd recommend watching people assemble tamales and remember tamales are a process, it'll take a lot of tries to develop a really good replica.
Melissa Dunlap I thought the same thing about the liquids! I worked with a vegan whose fam made homemade tamales and she said she uses more than a full stick of butter in her masa usually!!

I've helped my mom make tamales my whole life and I still wouldn't attempt to make them on my own. It's a long and tedious process for sure! That's why when my family makes tamales, we make enough to last WEEKS! 😂
I'm Texan so we have Tamales literally every holiday, plus I just have them in the freezer year round. I can bake & make a mean tex-mex anything but Tamales? I've tried year after year & umm yeah it's a learned muscle memory type skill...
I started my tamale training as a kid. I know he tried his best and he was so respectful but the open face and a big chunk of masa in the middle was cringe worthy. 😂

the filling is supposed to be inside of the maza, so you would’ve had to spread the maza out more to the edges so that when you put the filling on top and fold the tamale the filling will eventually end up wrapped inside the maza but overall you nailed the consistency of the maza ! they look great. Also you should try making tamales de raja, you’ll love them !!
I was looking for this comment. My poor Nana is so not happy looking down on this from heaven. I was like "NO! It needs to be all the way to the edges and tied with a piece of the husk😁😉." He did his best though so we have to give it to him!!!
No dude. Before you comment think about the different ways people make traditional tamales. My grandma makes them just like he did, only different being is that she made a small crater in the middle.

Julien it’s okay to feel overwhelmed, when my family makes it we have everyone helping. It’s like everyone helps makes the tamales in the morning and we eat them at dinner time . I do have a big family so we make a lot lot lol .

as a mexican, i can say that you did an amazing job! you really did follow the process of making traditional tamales :)
i'm a vegetarian and i got a vegan tamal recipe from a vegetarian cooking class. i have done them twice and they're amazing! here's the recipe (translated from the spanish as best i could):
ingredients:
5 carrots
3 zucchinis
1 small pack of peas
1/2 broccoli
spinach or chard
oil (whichever you want and whatever you need)
1 kilo of maseca or masa
25 corn husks per kilo (previously soaked, just like julien did :D)
water (the necessary amount)
salt
2 tbsp of baking powder (i use royal) per kilo
mix oil with baking powder and salt until it forms a paste and carefully add it to the masa until it feels moist. mix vegetables in a blender with water until they look like a sauce, add salt. add vegetable sauce to the masa mix until it looks like julien's masa. take corn husks and add masa mixture to them and fold. take the tamales to a steamer for approx 45min- 1 hour. if the masa breaks away from the husk without any problem, then it's done! :D
