- On the first Soul food Sunday episode of "Cookin' with Tee", Im making a winning vegan hopping john. This recipe is absolutely a 10/10. You must give it a try. It's perfect.
Vegan Hoppin' John
Recipe :
8 oz soaked black eyed peas
32 oz veggie stock
2 stalks celery, diced
1 medium onion, diced
1 red bell pepper, diced
4 cloves garlic, chopped
2 sprigs thyme
1 bay leaf
1 t veggie base
1 t tomato paste
1 t worshcesitre ( vegan )
1/2 t garlic powder
1/2 t onion powder
1/2 t dried oregano
1 t smoked paprika
1/2 t celery salt
1/2 t chili flake
1/2 t dry mustard
2 T vegan butter
1 bunch collards
Lemon zest and juice for garnish ( optional )
Parsley and celery leafs for garnish ( optional )
Black pepper to taste
Salt to taste
Extra virgin olive oil
1. Add oil into a pot and sweat out the onions and celery for about 4 minutes. Add in the bell pepper and cook for about 8 to 10 minutes until the veggies are sweated out and somewhat soft. Add in the garlic and cook for 2 minutes.
2. Then add in the spices and cook them out to bloom. Add in the thyme and bay leaf, then add in some vegan butter to help release any fond from the pan.
3. Add in some veggie base and tomato paste cook it out for about 4 minutes Add in your veggie stock.
4. Add in your soaked black eyed peas and cook for about 45 minutes to an hour.
5. Depending on thickness you can add more water or remove the lid when cooking to the preferred consistency of your peas.
6. Add in your collard greens once the peas are about 20 minutes out.
7. Serve with white rice.
8. Garnish with parsley, celery leafs or and squeeze of lemon juice and zest. ( optional )

Im late. 4 Qts cold water, 1 onion, 2 c mushroom trim, 2 carrots, 1 bulb garlic, 2 sprigs thyme
I don't eat meat at all today's menu is vegan Black eyed peas corn bread organic greens Sweet potatoes n baked Mac and cheese a 4 organic cheese n peach cobbler from scratch
There are anchovies in Worcestershire sauce. Therefore this cannot be considered vegan or vegetarian. The best you can call it is pescetarian, or completely leave out the WS.
Its a vegan worcestershire! i want to say it was annies brand, but i got it from wholefoods i believe.... was so long ago. they deff sell the vegan version!
