Brassica oleracea (Kale 'Scarlet Bor'). Nutrient rich and ravishing.

Super-food with Super-frills. This is without doubt -- one of the prettiest vegetables ever to grace a garden or garnish a gazpacho. Kale comes in many color combinations and leaf forms, some bred for taste and others for looks; or both. This variety of Brassica oleracea (Kale 'Scarlet Bor') is bred mainly for looks, yet can be used which ever way you like. Kale's flavor is enhanced with really cool temperatures, more so after a frost; also intensifying the leaf color. Deeply colored vegetables, especially the purple pigmentation in this 'Redbor' type of Kale are plentiful in anthocyanins and other phyto-chemials which may help fight cancer. Kale is considered a "super-food" packed with vitamins A and C, iron, calcium, magnesium, potassium, protein, carbohydrates, dietary fiber and has high anti-oxidant levels. As far as I know all kale is edible, however some varieties are selected for their better tasting qualities.
