    It is nothing but Idli in south India for ages. It is fermented rice pancakes.

    This is a very stupid question but how do you know when it is fully fermented? Should there be bubbles in the liquid? Or do you just taste them occasionally to see if they are starting to get tangy?

    Great recipe, so different from what I generally make, Do you leave a cloth on top of the jar to let oxygen come in or do you close firmly with a lid like in sauerkarut preparation?

    Thanks!! How do you feel after eating fermented rice? Does it really remove the sugar/carb content???
    I am thinking of using my milk kefir for experiment. Do you think its a good idea?
    (I am not concerned about the taste, as long as it is low carb/sugar 😊)

      When I eat unfermented rice I'm famished after about an hour and experience a sugar crash shortly thereafter. Fermented rice does not affect me that way. Conversely, it completely satiating! It gets quite sour so yes fermenting it dramatically reduces the sugar content. Ferment with milk kefir, whey from milk kefir, or water kefir is a great idea.

    Looks great, thank you for taking your time to make this video. I was always told not to eat bay leaves, but yo crushed it. So is it safe?

      Huh, never heard that before. I've been eating bay leaves for decades. As far as I know I'm still alive & healthy.

    Thank you for the information about how you can mix the whey with apple cider vinegar. I was wondering about that. I was afraid maybe you had to use one or the other and I thought what if you don't have enough of one? Now I know I can mix them. I was also wondering if you could use the liquid from a lacto fermented vegetable jar? I have some orange peels fermenting which makes a great drink and I have some cabbage fermenting. Could the liquid from one of those be used as a starter?

    How much apple cider vinegar would you use as a starter?

      1 Tablespoon per quart should be sufficient. But you can use more (ie: 1/8 cup) if you want it to ferment faster.

    Is it ok to cook fermented rice, then store in refrigerator to reheat for another time? Than you

      The more you reheat and then refrigerate food, the more susceptible it is to harmful bacteria. Because I care about your health, my suggestion is to cook the fermented rice as per when you are ready to eat it so as not to keep reheating it.

    Not sure I understand your end comments about adding hamburger instead of lentils...do you mean you FERMENT the beef with the rice???

    What if you just ferment it with water alone without whey or kefir starter?

      You can; however, in order to protect against bad bacteria, you might want to add at least a tsp of salt to your water per quart.

      @@bebepilosopo5248 your nose knows...trust it, if it smells rotted it is rotted. Fermented food has a pleasant slightly yeasty/slightly sour scent. Ferments only stay on counter a short time (3-12 days usually, depending on room temp...then you must refrigerate them, where they will last for MONTHS...(or store in a cool dark food cellar).       It all comes down to your personal preference. Just know that if you eat them slightly warmed or at room temperature you'll preserve most of the beneficial probiotic bacteria whereas if you cook them until they're really hot, most of the beneficial probiotic bacteria will die.

    The MEAT ferments?? How much meat could I add to this recipe? So I could use animal fat in it too…

      Yes, the meat ferments. Depends on how much you make. For this recipe I would add a pound of ground beef. Yes, toss in your animal fat too!

      High heat will kill probiotics. Low heat that warms shouldn't kill too much of the beneficial bacteria.
