I've tasted over 250 sparkling wines in England - Many are great, even better than basic Champagne. Well on their way to be a global force in the world of fizz.

@@OscarOSullivan a cellar for wine (or cheese) is somehow very complicated especially for sparkling wine. Check the importance of cellar in the process of making Champagne (maturation).

The cellar has already been built and has been in operation for some time.
@@clubrower the cellar can't be the same as in Champagne. You'll have SPARKLING wine and that's it.
