So today I made it she tasted it, nodded her head up and down then said "good job" 😩😩 there's a difference taste in plain white rice vs Haitian. Thank you Freddie on all your videos I love how you literally break down every step even down to what number the stove should be set at (which is very important).
It depends on the rice. My basmati definitely needs 4 cups water to 2 cups rice. And it never disappoints. It is firm and nice. But I’ll try this with jasmine rice.
Great video! My Mumi taught me similar except have atleast an inch to two inches of water above the rice and you in the safe zone but your way is more ideal as far as giving direction
The method you use to cook your rice is why you can use less water (starting with boiling water). I've cooked it both ways (2/1 and 1/1). Good either way, WITH a bag of foil.

Hey Freddie, yes my girl your rice is very shelly and I know it tastes good. However, the person doesn't understand the reason why you were able to use the plastic bag was you did wash it which made it be able to gain more structure. Also, the steam from the rice provides water which prevents it from burning. The rice is shelly because washing your rice allows some swelling because rice absorbs water immediately. The success to making good rice is actually washing your rice properly.
No they did not think the rice would burn they were arguing with me that the plastic bag would burn. It has nothing to do with washing the bag because I always use aluminum foil and I never wash it. I only used plastic to prove a point but I haven’t used plastic in years to cook my rice. It’s the steam that’s cooks the rice because all the heat is trapped.

Honestly, it has never mattered to me because as long as you get most of the water out and you suffocate the rice with either a plastic bag or foil on low for 15-20 minutes, the rice will come out PERFECT every time. I cook rice almost everyday in a big pot regardless of if I cook one cup or ten. The foil or plastic bag is going to create moisture. Basmati rice is my favorite, Jasmine rice is a close second.

Not any rice can cook like that, some rice, you'll need 2 cup of water 1 cup of rice, its done perfect. Some rice, in creole ( gonflé anpil)
