1 can (15 oz) chickpeas or 1½ cups of cooked chickpeas -drained
1 cup cherry tomatoes halved
1 cup cucumber diced
½ cup olives sliced
⅓ cup red onion chopped
½ cup corn
⅓ cup parsley finely chopped
1 avocado (optional) - diced

1-Table spoon mustard
1- Table spoon maple syrup
2-table spoons lemon juice
Half a teaspoon of garlic, salt,garlic
All good minus the 120 cals per Tbsp oil !

This is a great recipe. I roasted my chickpeas a little in airfryer before mixing, replaced maple syrup with honey as I didn't have it and also increased the lemon juice amount for my plate. It was so delicious.
