This video helped me do a good job on my first time filleting a steelhead/a fish in general! I mean I butchered the hell out of it, but considering all I had was dull kitchen knives, I did surprisingly well! The food bank gave me a steelhead that some dude there caught this morning. Really random.
Wow very great video Vin!! I will be fishing for one of my first steelheads this spring! This video will help me out a lot fileting them. Will the spring females have eggs too?
I always remove the lateral line from the filets, and I let my knife ride a little bit higher when skinning to remove the dark meat that’s right under the skin.

"you're not wasting anything..." i definitely JUST watched you explain in what way you were wasting parts of the fish but i appreciate the vid
in my country, we can utilize those bones and heads of the fish for a good soup with a few slides of tomato, pineapple and starfruit.
Hey vinner! Try giving the steel head and salmon carcus to your chickens, it will make the eggs brighter and taste a little better!!
Was thinking the same thing
Thank you! Very helpful. I'm ready to get my knife and go to work!
I leave the first filet on by the very tail and flip it over to do the other side to prevent the slipping you were struggling with.
Good idea!

Yes they will!
Go Vin!
I cut the first side to the end and leave it on so the second side ain’t as hard cutting.
I prefer to cut them into steaks but fillets are great
Where was this fish caught. Seems pretty light on that meat color. Usually I don’t see fish that pale until they are more colored up
Michigan
That makes sense. I was thinking you caught that on the westcoast where I’m at. Either way nice fish. I’m sure it tasted just as goo
Rest of the carcass makes for good crab bait
Perfect
What's wrong with freezing the fish in those bags?
meat side down, salt fingers and tail then pull skin off
It’s definitely better if you gut the fish before you fillet it otherwise you’ll miss meat like how you did with the belly meat

Lots of waste dude ! U could do it better for sure
