Toriyama is, currently, the most famous author internationally, yes.
A couple of decades ago it would have been Ozamu Tezuka, but he has been dead for a long time now, and while his work was re-adapted into Anime for a while in the early 2000s, that also was 20 years ago.

Personally from a not japanese perspective Pokemon feels like the best game to represent Japan. Mario is probably even more well known than Pokemon but I feel like less people could pinpoint it as coming from Japan than they could with pokemon

Hmm... now that I think about it a lot of the Mario characters are somewhat 'western' themed, like the princesses, Mario Italian and other characters similarly have western looking characteristics/clothes, Boo resembles western depiction of a ghost Correct me if I'm wrong, but at least I do not recall ever seeing any Japanese horror movie, game, anime or anything where paranormal entities (like ghost) are depicted as white sheets that float with a face and hands only, a lot of the side characters have western looking clothes and Bowser looks very similar to alligator snapping turtle (almost exclusive to USA).
Just to clarify, I only point that out for the sake of argument for why a lot of japanese might not recognize them as japanese characters. So to many they are very unique looking characters and might be part of the appeal to japanese. To westerners they do too look very unique but the resemblance to things we've seen before is clear. I've seen Japan turn a lot of western themes things into something great. I believe it's unfortunate that despite of Japan's culture being popular here in the west, we do not see much of it attempted to be turned into something great the same way, whether it's a video game, movie or a story. Mostly just see them being a minor part of something like just a katana as a weapon, maybe traditional Japanese clothes... now that I think about we don't really know much about Japanese history, only things that popular culture reach out to us (such as the things I mentioned)? But to be fair, despite of our cultures being put under one single umbrella of "west", there's massive amount of different cultures, history, mythical creatures and stories to draw inspiration from.
A side note, Mario is a collab project between Nintendo JP and US.....

Most people see his work as a sort of ground zero for the qualities of what we now recognize as Japanese manga and anime. He's known by the nickname "The God of Manga" for that reason.

I watched a ton of anime without even realizing that it was different from American cartoons like Silverhawks, GI joe, Transformers, etc. I didn't hear about Doraemon until like 2015. I don't know how popular it was in Europe or SA, but in the Southern US, it wasn't a thing.

This was a fun stream, they took a long time to finally get one answer right. Aqua was really hoping for more rounds because shes bored. Mario. The name and the game titles are usually in english. Towa probably got things confused because of this. And unlike Sega, Nintendo doesnt really like to sponsor them, they get strikes instead. Thing about Fujiko's name is, you need to clarify if its the A or the F of the Fujiko Fujio partnership. Thats why the F is necessary. Food they eat during xmas in japan, either fried chicken or cake, and for the couples love hotels.

The manga question kinda depends on the age of the person you ask. That being said, Toriyama was first that came to mind to me and it's still probably the best known mangaka even for people that are not so into anime/manga

Technically, Transformers can be American. While the toys originated from Japan, it was America that gave those toys characters, backstories, etc.
