Hong Lim probably the best hawker at chinatown with a large variety of good and affordable local food to try... Most foreigners will just go the Maxwell and eat the expensive no-so local stuff instead. Hope the video will spread to more visitors planning to try actual local food.
I used to think that Outram CKT was the best for many years. Tried Zion, Bedok South and many high recommended ones but all fall short until I ate at Telok Blangah hawker centre - from Margaret Drive. Mind blown. Now not sure Outram or Hai Kee sits on the throne.

Once, I was like the first customer and they only fry a plate for it. I thought I probably will get a fabulous plate of CKT. I was super disappointed. It was just so very average. I realised that the uncle is used to frying like 20 to 25 plates at one go for years. As such, the proportion of sauce vs Kway teow/yellow noodle and the technique of mass frying has been mastered but not individual plate.
