Roast Bake 3 Ways: Coconut, Carrot, Pumpkin Recipe by Chef Shaun 🇹🇹 Foodie Nation

- Trinbagonian bake is a traditional Caribbean bread known for its rich flavor and soft, slightly dense texture. Made with flour, sugar, baking powder, salt coconut, pumpkin and/or carrots, it's kneaded into a dough, shaped, and baked until golden brown. This local staple is enjoyed with cheese, buljols or by itself.
Roasted Bake Three Ways
Yield - One 9” Bake.
Ingredients
Warm Water - 5 fl. oz.
Honey - ¼ cup
Instant Yeast - 1 ½ tsp
All Purpose Flour - 2 ½ cups
Salt - 1tsp
Baking Powder - 2 tsp
Unsalted Butter - 3 oz (6 tbsp)
Finely Ground or Grated Coconut/Pumpkin/Carrot - 1/3 cup
Method
* Combine warm water, honey & yeast.
* Cover and allow yeast to bloom for 10 minutes.
* In another bowl, combine flour, salt & baking powder.
* Make a well in the middle and add water mixture.
* Knead to a shaggy texture before adding butter & coconut/pumpkin/carrot.
* Continue to knead for 3 to 5 minutes.
* Place dough in a greased bowl, cover and allow to rest for 1 to 2 hours.
* Preheat your oven to 350F.
* Roll out your dough into a 9-to-10-inch disc.
* Place on a greased baking sheet or pizza tray.
* Bake for 25 minutes.
* Transfer to a wire rack and allow to fully cool before slicing.
Saltfish Buljol
Ingredients
Coconut Oil - 2 tbsp
Onions - ½ cup (thinly sliced)
Hot Pepper - 2 tsp or to taste (finely diced)
Pimento - 2 tbsp (finely diced)
Garlic - 2 tbsp (crushed & finely diced)
Salted Cod - ½ lb (boiled and shredded)
Tomato - 1 cup(cubed)
Ripe Avocado - 1cup (cubed)
Chadon Beni - 1/8 cup (finely chopped)
Method
* Heat oil in a medium sized pot over medium heat.
* Once heated, add onion, hot pepper & pimento.
* Allow to cook until onions are translucent (about 2 minutes).
* Add garlic and salted cod and allow ingredients to come together (about 2 minutes).
* Remove from heat and add remaining ingredients.
* Taste for salt and enjoy!

I got bored today and tried making this it tasted delicious it nice and soft
Also, if after boiling the salt fish, you still find it salty,strain off all the water, in a separate bowl with warm water add some brown sugar to the water, put in the drain salt fish and squeeze out the water. Then place in a colander under running tap water and squeeze. Tried and Tested. No Salt Version.
I had tried, molasses and coconut bake. Very delicious as is, or can make it a sweet bun, just paste top with a melted jam of your choice or mini squares for any brunch.

I like the addition of the carrot and pumpkin instead of coconut. I will make my version flatter. I cannot eat the bake soo thick.
