In this video we're opening up a new American made cast iron skillet. We're always on the hunt for quality cast iron and as many of you know it's hard to beat the old vintage stuff like Griswold or Wagner. We're giving a review of the Field Company cast iron skillet that recently launched to give our honest opinion on how this stacks up to the old cast iron.

I received my Field skillet last May and I absolutely love it!! If you look under the helper handle you'll see a number - that's the Julian date of when your skillet was made. I thought that was pretty cool! The number on the back shows the number 8 - that's actually the size of the skillet which means it's a 10 inch skillet (not an 8 "inch" skillet, but a "size" 8). I seasoned my skillet with Crisbee and that has worked out really well - great product. And the first dish I cooked in mine was cornbread.

I forgot to mention that I pop popcorn in my bigger cast iron to season it. No salt of course. The iron gets real hot and the popping spreads the oil. Plus we get a treat😉. God bless!
I'll oil my hot skillets and AFTER they have COMPLETELY cooled wipe them out "dry" so as to not leave any oil standing on the surface. This is particularly true for the corners. I found that if I leave oil in the skillet that has not been drawn into the metal after it cools it will become sticky and build of a thick and rough seasoning. Once the skillet has cooled completely there's no need to leave "wet" oil on the surface. You'll notice when you pre-heat the skillet that oil that has not carbonized will come back up to the surface so you know the skillet is protected against rusting. Also, don't pre-heat a dry skillet too long. I typically go 10 mins on medium heat but if the skillet starts to smoke I'll go ahead and put some oil in it to prevent the seasoning from burning off.
Very good tips, this is exactly what I've found is true from my experience also. You don't wanna leave too much oil in the skillet, I also always wipe it dry after it's completely cooled off. And absolutely DO NOT pre-heat a dry skillet too long on too high of a heat level...I've learned the hard way not to do that. I accidentally caused large chunks of old seasoning to come loose from an old vintage Griswold pan by doing that a few times too many, while I was distracted prepping foods and left my pan heating up unattended on too high of a heat. I'm still in the process of building it back up with regular cooking. Pre-heat a dry skillet just until it gets hot enough and then add some oil.

Bought this back when it was in kickstarter (think I got it for $80) and man, it is a nice piece of iron. Been my everyday skillet for about a year now with no problems. No stick, no problems, great heat, cooks everything like a dream no matter how much heat I need. Really impressed by what this company did.

I'm a little late to the party, but I ordered a Field #8 skillet yesterday based on your other videos. I just watched this one today and it made me feel good about my purchase. Got my first Field skillet a few weeks ago! First thing I cooked, potatoes. Love it!!! I also have a real old 10 inch cast iron skillet. No name but a long grove cut across the bottom and a #8 on the handle. Belonged to my mother-in-law and she was 89 when she passed so it has to be close to 90-100 yrs old.

I picked up some Lodge Cast Iron years ago. (My Mother wouldn't turn loose of hers.) A 10" and a 13" Skillet as well as a Dutch Oven. I picked them up brand new.
They made it as far as the Work Bench on the Patio where they were attacked with a Palm Sander. They started out rough, but they ended up as smooth as Glass. Of course this stripped out the Seasoning but that was OK.
I washed them down with Soap and Water then dried them as I fired up the Weber Grill. I smeared them heavily with Bacon Grease before placing them on the Grill opposite of the Heat. I let them cook for several hours, rubbing grease into them as needed.
That was several years ago. They are my Go To Pans and Pot for just about anything.
It's good to see there is a company out there that will make it easier for people to get good Cast Iron Cooking materials without the effort I had to put in. (Then again you can also just visit Flea Markets.)

I also use my Weber to season cast iron, there's no better way to get a long seasoning with a slow cool down and NO odors in the house :)
I was one of their kickstarter backers and it's my favorite pan - I had to order a size 10 when they had a few available earlier this month and I love that one too. Thank you so much for being online. I have been following your advice on caring for my cast iron skillet for several months. It still got gunky. Didn't know you could use too much oil. So I watched your video and de-gunked my pan today. It looks great and all that residue is gone. I stopped using aluminum cookware 15 years ago and have been using ceramic because there is a link between Alzheimer's Disease and aluminum. They say that the metal transfer to the brain is due to the shift to aluminum cookware post WW2 and drinking from aluminum cans, They have also linked an increase in anemia in women to a shift from cooking with cast iron. So ceramic and cast iron is recommended. But two days ago, the ceramic dutch oven that I have used for 15 or 20 years finally cracked. They no longer make the brand I have. Now I am looking for a cast iron dutch oven on a limited budget. Again, thanks for being here.
Hey, Kent and Shan, love your videos. I rec'd my Field skillet this summer and love it. Glad that you found it, too. The Field skillet is like some of my old vintage one-notch Lodges that have thinner walls and don't break your arm picking it up.

$100 for a quality skillet that will last for generations is seriously NOT that much to spend. think about how many sets of cookware people buy during their lifetimes that wear out or get ruined. I'd rather have cast iron I can pass down through my family.

I had an opportunity to buy it recently, but for $100.00 I waited until I hit my local antique mall. I ended up with a #8 Griswold, Large Block Logo skillet with heat ring for $40.00. I ended up restoring it which I love to do and I'm all set. That said, this is a beautiful skillet like they used to make. For folks that don't like to restore old Americana, this is the next best thing! Thanks for the show!
I just ordered a new American made cast iron dutch oven and will use it with the skillet I inherited from my grandmother who used it each day to cook on her wood stove. I grew up eating the food she cooked on that stove and using that skillet and I loved it so much.

I just bought a cast iron skillet today. I'm learning how to season it. First thing i want to cook is fried chicken. I hope with the olive oil and fried chicken, things will turn out good.

Thank you for this video! So disappointed in the cast iron pan I bought a few years ago and discovered the rough surface. Being new to cooking with iron I thought my seasoning wasn’t right (and I’m sure now it wasn’t) - after months I gave up. Found out the old iron pans were smooth and have been on the hunt for one since. Found some at antique shops but they were no better than what I had bought new. So happy to have found your channel and can’t wait to get a Field pan. Thanks again!

Lodge and emeril lagasy both make pans as rough as 40grit sandpaper. They were given as gifts. I wound up having to sand them down with a palm sander, would have taken weeks to do by hand. They were pretty good after that but I recently got the stargazer 12” and am really liking it. Smooth out of the box.

Just wanted to say thanks to you both. I bought the 10" and I'm getting the 8" to give me two on the stove top. Much love! I'm keeping my big Lodge stuff, no reason to throw it out, but I don't know when I'll ever use it again. It is NOT as nice (and the missus hates the weight of the Lodge pan).

I have a lodge skillet and I was given all the wrong advice on care and ended up ruining it. I only was able to recover it based on Kent's instructions but it was a lot of work and I haven't bought any more cast because I wasn't looking forward to the whole sanding and re-seasoning process again. Something like this makes getting new iron seem much more appealing.

All my cast iron, but 2, are hand me downs from my mom, grand mom and great grandmothers. I bought a Stargazer unseasoned pan and am surprised at how much I love it. It, too, is made like the old favorites were made. Kent, try it, you will love it.

Hey you two, thank you for the great review. I guess I’m fortunate, in that I’ve got a local guy who buys, restores and sells vintage Griswold, WagonerWare, etc. cast iron from when they were made right. So, he always has around 50 or more pieces available, plus ones in the restoration process. And the best part is, I can get a restored and preseasoned skillet and never pay more than about 65.00. A Griswold 8qt Dutch oven with bail and lid will set me back around 100.00,but I will soon own one. A hundred dollars may seem pricey to some for a skillet but, aside from lasting longer than you will, it is USA made, nice and thin, and easily available to anyone without access to the good old cast iron. It should, however have a pour spout, which is indispensable for pouring off the drippings, that is an oversight that should be corrected.

Kent, Glad to see it Made in USA. I picked up a #8 and #10 and so far they are outstanding iron. Sure it's up there in price, but there are others a lot higher, and the old saying that I stick by..You get what you pay for.. Very happy with them. What I did not see on their website is any additional sizes. I'm assuming these are it for right now. I got hooked on CI late in life and I only have 4 'old' pieces. one wagner and one Griswold, plus two old lodges. and I have to say, it did not take me very long to get all my 'new' lodge skillets just as nice as the old ones. I love em all! have about a dozen new lodges no days.
and if I still lived in the states, my wife would not be too happy with me collecting cast iron!
You mean sanding the "new" or just by using them they to get them just as nice?
My #10 and #12 skillets came yesterday. I'm oven seasoning them today. I'm doing the happy dance.

I mostly use Lodge cast iron but did "inherent" some old collectible Griswold, Wagner and National cast iron pots and pans. These came from a 80 year old sister in law who got too old to cook...at least according to her. He mother recvd. them as a wedding gift.
I think I will try one of these new Field company pans and retire the old pieces. Thanks for the review.

This is my first time commenting on this channel. I guess you could say I've been lurking for a couple of months now. I love cast iron too! If I could, I would buy everything ever made in cast iron just to say I did! I had a skillet get itself into a stovetop fire that fortunately did not burn the house, but it was scarey. All the seasoning was burned off down to the bare metal. It didnt cook right for about a year no matter how much I used it. But its fine now. We have flea markets galore here in NWArkansas and there's always a cubby that is full of used cast iron. I tell myself Im going to grab a bunch, but the prices aren't always better than the new stuff. Shannon I couldn't help but notice that Ken's towel looked an awful lot like your pretty scarf. You might want to keep an eye on your closet and make sure that boy doesn't get the two mixed up! Take care!

Support small businesses IE: CO-OP's, farmers markets, the roadside produce fella selling fresh taters, seasonal pumpkin patches, old man with a truck & trailer full of split oak, hickory, cherry or even good o'l smelling piñon. Doing that helps startup local businesses and those folks tend to give you a fair deal and remember faces.

Your joking around with the students of your cooking school is a lot of fun to watch. Ah cast iron the original non stick. I have tried probably every type of frying pan and they all work great for a while but soon start to stick. Cast iron just gets better with use and is the easiest to clean with the hot water method. Thanks Kent great channel.

Finex or Smithey?? Cant decide, both look and seem to perform amazing.
If you want a larger modern cast try the 10 inch stargazer it's a great pan hoping they will put out larger pan soon and yes it's made in the USA (the assist handle is larger for a better grip)
