Lilac Jelly

- The Recipe:
The Tea:
3 Cups lilac flowers, destemmed
5-6 Cups boiling water
in a 2 quart jar, pour the boiling water over the flowers and let sit until cool. Cover and let stand in the refrigerator overnight. Strain through a jelly bag or cheesecloth.
The Jelly:
4 Cups lilac tea
1/4 Cup reconstituted lemon juice
1 packet fruit pectin
4 cups sugar.
Mix tea, lemon juice and pectin and bring to a full rolling boil. Add sugar, bring back to a full rolling boil and cook for one minute. Fill sterilized jars, leaving 1/4 inch head space and water bath process for 10 minutes.

This is something to look forward to maybe next year, we got a late freeze this year just as ours were starting to bloom. I think I might try this recipe with our Hollyhocks.
