    4C blossoms (cleaned of insects and picked from stems)
    2T lemon juice
    1 Package powdered pectin
    4 cups boiling water
    4C sugar
    Pour boiling water over blossoms. Allow to steep at least ten minutes or longer. Strain the tea. Pour four cups of tea into pot. Bring to a boil. Add lemon juice. Can add a few crushed blueberries for color if desired. Strain out the berries. Add pectin and bring to a boil. Boil for one minute. Add sugar. Boil one minute more. Pour into jars leaving 1/4" headspace. Wipe rims with a damp cloth. Put on two piece caps. Process in water bath for 10 minutes. Allow to cool several hours covered in a bath towel. Check seals and remove bands. Label and store. Enjoy!
