Chili Pot Pie (With Cornbread Crust)

  • Chili pot pie 🥧 a delicious steak chili with a cornbread top crust. It's so hearty and so delicious. This is perfect for a fall day. I love a good spicy chili. I kept this tame because I have some people who can't handle my level of spice in my family. I used a poblano and jalapeno pepper, I rounded out the smokey flavor with chipotle pepper powder. You can give a little spice with smokey flavor.
    I used some petite sirloin from my freezer, but you can use any steak you'd like. You can also use ground beef or eliminate it all together. I love steak chili, though, personally.
    Complete it with a sprinkle of cheddar cheese. It will melt on the hot pot pie after it comes out, and some sour cream 🤌 so good! Everyone has their own style of chili, and that's the great thing about cooking.
    Note: I do not measure when I cook so often you'll see me not using any measuring equipment because I just know from eyeballing. However, I wrote up some measurement estimates for you to replicate my Chili 😊
    Chili:
    1 lb steak, I used petite sirloin
    Season to taste, I used seasoned salt/hamburger seasoning blend/black pepper
    1-2 tablespoon oil
    1 tablespoon worcestershire
    2 tablespoons tomato paste
    1 onion
    1 red bell pepper
    1 poblano pepper
    1 jalapeno
    1/2-1 tomato (I had half a large one I ended up using, or you can use a full smaller tomato)
    1 tablespoon garlic, minced
    1 tablespoon chili powder
    1 teaspoon Chipotle pepper
    1 teaspoon cumin
    1 tablespoon beef boullion
    1/2 teaspoon black pepper
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    1 (28 oz) can crushed tomato
    1 tablespoon brown sugar
    1/2 cup-1 cup water (I put it in the crushed tomato can and swished it around to get all the tomato out)
    1 can kidney beans or beans of choice, rinsed
    Salt To Taste, tomatoes can take a lot of salt, and it usually does need it so season to your taste
    Cover and let simmer while you make the cornbread crust.
    Cornbread Crust:
    1/4 cup melted butter
    3/4 cup buttermilk
    1 tablespoon honey
    1 egg
    1/4 teaspoon salt
    1/4 teaspoon baking soda
    1 teaspoon baking powder
    1/2 cup Cornmeal
    1/2 cup all-purpose flour
    Portion chili into 4 large ovensafe bowls (mine are 18 oz) and divide cornbread onto each bowl. It's roughly 1/2 cup of cornbread on each.
    Bake At 350° F for 20-22 minutes
    Toppings:
    Shredded cheddar
    Sour cream

    Love it. I'm gonna try this. I would have never thought to use cornbread crust. Here in Ireland we just use mashed potato for this kind of thing
