Pirates of the Mediterranean: Dead Crusaders tell no tales
Google the Uskoks. They were actual medieval pirates operating out of the Adriatic.
Peter Gray Not just Adriatic, but also along the Baltic coasts after the age of the Vikings as well as in the Mediterranean. Both the Fatimids and Byzantine Empire commissioned a sizable navy to combat piracy in the eastern Mediterranean. There’s also German pirates that target shipping from the Hanseatic League in the North Sea and Baltic Sea. There’s even a record of one Eustace the Monk or the Black Monk, a pirate operating from Jersey on the Channel Islands, who sold off his service to both the French and the English to attack each country’s shipping. He was captured in an English retaliation attack on the island and was beheaded.

Fun fact: to know someone in that era of English was slang for having sex with them, as in to know someone in the Biblical sense, so that makes a great and in-character pun for Jack.
basically the viking, Haesteing (en.wikipedia.org/wiki/Hastein) ""the lusty and terrifying old warrior of the Loire and the Somme",[6] when he arrived in England several years earlier.
