Dumper has a stroke - 75 mm. Therefore, use a thick stroke limiter (Blue rubber hose). If you use the pedals without the dumper, you can increase their stroke.

Appears to me to be overly complex for complexity's sake. Can be much simplified and still work as well. Back in '94 I built a simple pedal with a vertical action like that of a helicopter control. It will outlive me, it's so tough. It cost perhaps $30, being made from a surplus 3/4" ball bearing arbor, some wood and a 3:1 reduction gear (to convert the +/-10 degree throw to the +/- 30 rotation of the pot.) The foot placement is wide, and my heels remain always in contact with the base board. The result is unsurpassed precision of control not remotely possible by kicking one's legs fore-aft. Build your own, guys! Take the electronics from your busted pedal and cook up the mechanicals. It ain't hard to do, it's not expensive and it'll last forever.

My Saiteks just broke (again) and I need some new pedals, these look hella good.

The rudder pedals look really good. Are they contact or non contact sensors. I reckon if the are non contact, pedals aught to work for a long time.
All our pedals have contactless sensors on all axes. F16 pedals were the same.
