Glass Noodle Chicken Salad

This Asian-style salad combines glass noodles with fresh herbs, vegetables and shredded chicken with a hoisin dressing that's slightly creamy so it clings nicely to the slippery noodles. The lime cashew crumble sprinkled on top really makes this, so don't skip it!

are you looking for a substitute to the mayo? You can omit it, it wont change the flavour that much. This salad is absolutely delicious I highly reccomend making it! I use shredded carrot and finely shredded beetroot or red cabbage, coriander and parsley no mint or cucumber. So tasty and nutritious

Can I use something else crunchy besides Peanuts? I want my family to enjoy this and my cousin unfortunately has a peanut allergy.

They aren’t peanuts. They’re cashews in the recipe

Most nuts would work I think. Cashews are being used here, but almonds, walnuts, pecans even hazelnuts would work too. All unsalted of course 😊

@@bendelbridge All great suggestions, however Idk the full scope of her nut allergy, all I know is that she's allergic to peanuts, I wish she would do a follow up with an allergy doctor to see what all she is allergic to. Until she does, I don't want to risk possibly having to call an ambulance to rush her to the hospital.

@@RoyG.BivDevoe actually fried shallots might work but right at the end. You can get them from most supermarkets these days. Use them at the end as any liquid will make them go soggy and lose their crunch
