Costco rotisserie chicken is such a deal. I make chicken broth pretty much the way you do but do roast the bones under the broiler as in the previous comment. Everyone loves the stuff I make with it. Especially American goulash. If there is too much chicken fat after it cools I scrape some off and use it for roasted potatoes with some butter added in. All yummy and healthy too. Lately, Costco chicken at Victorville, CA has been too undercooked.
I find them to be always under cooked. I cannot eat chicken with bloody bones.
