Sir, everything is well-illustrated but I doubt if change point or turning point is the point where the instrument is set. As per my studies, it should be that point where first Foresight is taken from one instrument setting and then foresight is taken from another instrument setting.

siir mera ek quation ki ager cement ka initial setting time 30 minute ka hota hai per ager setting time 30 minute se jyada ho jaye to hum kya kare kya hum ush cement ko use kar sakte hai.

Why do we prefer height of instrument method during leveling than the rise and fall method?
Because of simpler calculation, rise and fall becomes little tedious, but it is upto you, you can choose any method

Initial setting time of almost all cements will be around 120 to 150 mins and that is normal range
