That looks delicious! I could make a meal out of those on their own. I will say I'm glad I don't live in the south & will enjoy still using my oven, it's just about to drop below 50 here. I will have to get some zucchini and try this out soon. Thanks for another great recipe.

I'm always the first person I know whining about the heat-and ours rarely gets as hot as yours! I'm taking advantage of the beauty and making broccoli cheese soup today. I'm going to a great Farm Market next week. zucchini is on my list!

@@stephsstovebystephaniethom7249 I did get zucchini & corn on the cob (4 for $1!) and some other treasures. I love taking well made veggies to Daddy in the nursing home! I took corn on the cob & a muffin I made last time I went in & the enjoyment on his face is golden to me! I can't handle heat like yours! Today is unseasonal but I'll take barely 60 anytime! I'm celebrating my birthday tomorrow with zucchini & corn or parsnips with Daddy!
