OLD SCHOOL CUCUMBER,TOMATO AND ONION SALAD

This is a cool refreshing salad
I usually make this in the spring time or summer time when vegetables are more flavorful
RECIPE
2 large cucumber peeled,seeded and sliced
2 cups diced Roma tomatoes
1 yellow sweet onion sliced
1 cup olive oil
1/2 cup vinegar ( your choice)
Salt and pepper to taste
Add all veggies to large bowl
I whisk oil and vinegar and add to veg
Mix together and season with salt and pepper

I just ate this with green pepper in it, that’s how I make mine. I made a pot of pinto beans and cornbread. I was raised on all these staples. This salad is great with everything.Have a blessed night!

Love it had it often growin up. I’m like you I’ve expanded upon it with different vinegars. I also like to add roasted garlic and black olives sometimes. I like salads that lettuce is not the main ingredient.

Chef, I really like this one. We mostly had just cucumbers , vinegar, and pepper.That's all we knew. This looks very refreshing. Now a lot of times for a meal I usually have a Salad and a couple pieces of fried or baked meat.Now I am going to have this salad and my meat.Right on time with Spring and Summer coming. Great recipe.
