I love papaitan! Especially during damp weather. Strongly reminded me of my childhood days in the 1970’s at then semi-rural Novaliches, Quezon City.
I kept thinking they were saying "pampainit" as if they wanted to warm something up for me 😆
@@tagalogkurt Well to be honest , papaitan translates in English as goat/cow dung soup. The bitter taste of the broth is the result of extracting the bile from the partially digested food in the goat’s /cow’s stomach.

Kuya Kurt, if you are still in the Barangay Rizal, Taguig area, I recommend you check out these two places(if you want, i can take you there myself):
The first one is "Jerry's Pares", which is open 24-hrs, this place is a local legend, and I believe this one's over 2 decades old. The second one is a row of carinderias at the portion of Kalayaan Ave that's just right across BGC, that are also open 24 hours and cater mostly to BPO workers; and you get to eat "al fresco" right by the side of Kalayaan Ave. And I recommend going there between 12am to 2:30am, when the food is newly cooked(they usually begin prepping at 11pm). Just don't forget to bring your own bottled water though, or go grab one at the 7-11 before you cross over to that side.

Yup that ever present towel on the shoulder for wiping sweat. The Good Morning towels are the best ones we use. Sisig is normally reserved for pulutan but nobody said you cant use for ulam. I recommend you try liempo instead with toyo n calamansi as sawsawan. The requisite sabaw.

Usually, where taxi or jeepney drivers are lining up towards a carinderia, it's an indication that's a good one. And although I know you have a military background and can take care of yourself when things go south and we Filipinos are friendly, just still keep an eye out. 😊
