Filipinos abroad, who never even seen a crispy pig face in the Philippines, tell foreigners that this is very common in the Philippines. One Filipino family in London invited some British friends for Christmas and they put a roasted head of a pig to impress them with something supposedly culture. In the processed they Traumatized their 5 year old son who was a huge fan of Pepa pig. The little boy was scarred for life. Okay, pig face is called Mascara and they are sold on sticks for 5 pesos pesos. But when put on a sizzling plate it becomed 5 dollars. because it is called sisig. but Mascara is the lesser known street food made from the face of the pig.
Trying Sinigang alone will expose you to the culture of each provinces. Every town have a different versions of sinigang. From the meat, seafoods, the veggies and the thing they used to make the soup sour.
I Heartily agree with all you said about food connected to the culture of the country. And yeah any foreigner who comes to the Philippines and experience the friendliness of the people most especially in the province and rural areas will always say, “they are so nice “. Thank you for promoting the Philippines. BTW there’s a restaurant also in Quezon City and their specialty is Crispy Pata , it’s soft inside and crispy outside, so yummy. I went there last May when I visited my sick brother. Next year when I visit my brother again I’ll try that crispy pig face. More power to you Kurt. 😋👏👍

Hey Kurt, the best way to enjoy sinigang na bulalo is to dip it in patis with calamansi and bird chilies. As for the crispy ulo, Mang Tomas works but it works better with soy saucer, calamansi, and chili.

The Philippines has a very diverse mix of cultures and food. You need to expand your horizons by checking out the other areas outside Manila. Go to another island. Go to Iloilo and Bacolod the food over there is different and delicious.
Kurt, when you want to say fancy in tagalog.... you say, 'sosial' ( social) .....When someone is being fancy or high class... you say, " Ay ang sosial mo naman ! " ... " Ang social naman ang restaurant ito ! "

The bulalo contained something you didn't mention, water spinach (ong choy in Cantonese). Ironically, a Filipina who was a member of my congregation said her people didn't eat water spinach. It was grown but only to feed pigs.
Not here in the states. I just had it with 'sinigang' pompano from one of the biggest Asian / Oriental supermarkets in NJ....comes grown around the area & FL for the Asian community & expensive too! So please tell your friend about it! It just happened to be part of the hogs diet in Pinas. We did fed hogs with it & consumed it too as another vege! Goodluck & Godbless!

Noxious weed in the sense that it grows so proliferously especially in the watery environment its natural habitat in 'Pinas.I don't know how it got introduced in FL because as far as I know it is native to Asia. That's probably the reason of it's classification in FL. I heard, not varified yet that Lao & Vietnamese folks are cultivating it on land! Kuya Kurt, sinigang is flavored with green tamarind, or 'camias', or green tomatoes, even green guavas or green mangoes. Some regions use 'batuan' which is a local fruit only found in certain regions. The so-called 'sinigang' powder is just for convenience especially places where the above souring ingredients are not readily available. Crispy - malutong.

The Philippines has a very diverse mix of cultures and food. You need to expand your horizons by checking out the other areas outside Manila. Go to another island. Go to Iloilo and Bacolod the food over there is different and delicious.

The bulalo contained something you didn't mention, water spinach (ong choy in Cantonese). Ironically, a Filipina who was a member of my congregation said her people didn't eat water spinach. It was grown but only to feed pigs.
Not here in the states. I just had it with 'sinigang' pompano from one of the biggest Asian / Oriental supermarkets in NJ....comes grown around the area & FL for the Asian community & expensive too! So please tell your friend about it! It just happened to be part of the hogs diet in Pinas. We did fed hogs with it & consumed it too as another vege! Goodluck & Godbless!

Noxious weed in the sense that it grows so proliferously especially in the watery environment its natural habitat in 'Pinas.I don't know how it got introduced in FL because as far as I know it is native to Asia. That's probably the reason of it's classification in FL. I heard, not varified yet that Lao & Vietnamese folks are cultivating it on land! Kuya Kurt, sinigang is flavored with green tamarind, or 'camias', or green tomatoes, even green guavas or green mangoes. Some regions use 'batuan' which is a local fruit only found in certain regions. The so-called 'sinigang' powder is just for convenience especially places where the above souring ingredients are not readily available. Crispy - malutong.
