As for the spiciness sir, it depends on the region. Manado food is spicy as hell, so is lombok food. So the more known dishes are indeed not too spicy. But there are so many regions and their food in indonesia that still are under the radar and not well known by the majority. Not even in holland.

It would be much better if you could taste dishes from other regions in Indonesia. Indonesian food is not only sweet and sour base but in many regions the authentic staple foods tend to be salty and very spicy such in sumatera and sulawesi, i supposed if you use carolina reaper instead of our common chilli padi for preparing dishes from that regions is doable. The most famous authentic Indonesian dish is beef Rendang from west sumatera. Spices use for making beef rendang itself are varied from one region to another in west sumatera. Last year Gordon Ramsay intentionally came to Padang and learned how to cook beef rendang from local. the recipe that Gordon adopted was from padang (city) but in other region in west sumatera such Minangkabau and payakumbuh may use different spices. but both rendang are authentic from west sumatera. other famous dish from Indonesia is gudeg originally from central java, same as Rendang, each region in central java may prepare it differently using slightly different spices. Wish more people in the US visit our country and travel around trying different local specialties in each different region. From the bottom of my heart thank you for appreciating our cuisines.

I do like the concept of the restaurant how it's fused to look pretty for our eyes. 6 feet under was very unusual to me, but I want my "jus alpukat" to be served that way, it looks weird yet awesome.

In the state of Florida Dutch restaurants serve Indonesian food like sate, Semur (smoor), lapis legit (Spekoek), etc. So not surprising that americans having italian pizza and spaghetti as daily food, as the Dutch having Indonesian food as their daily food. 34 provinces and 1400 islands. U can go raw from something extreme like eating worm, intestines to much more refined and tasty such as rendang and gulai. And i also recommend babi panggang karo from north sumatra. Ikan arsik. There's no end to list tho not to mention cookie and dumpling

Also Bali was a part of Indonesia, it was one of province among 34 provinces in Indonesia.
