      in case of dry food without soup you can eat them with barehands, its a custom. of course wash your hands first. trust me im indonesian and its more delicious this way

    Indonesian food is one of the best in the world, mostly because of its history also. so many cultures blend in, not only the local cultures but also arabic, chinese, indian, european through dutch and portuguese, japanese also. its all blend in creating a unique taste.

    As for the spiciness sir, it depends on the region. Manado food is spicy as hell, so is lombok food. So the more known dishes are indeed not too spicy. But there are so many regions and their food in indonesia that still are under the radar and not well known by the majority. Not even in holland.

    those are only few Indonesian specialties mainly comes from java, that shrimp dish is not authentic but you indonesian fusion (with chinese food influence). It would be much better if you could taste dishes from other regions in Indonesia. Indonesian food is not only sweet and sour base but in many regions the authentic staple foods tend to be salty and very spicy such in sumatera and sulawesi, i supposed if you use carolina reaper instead of our common chilli padi for preparing dishes from that regions is doable. The most famous authentic Indonesian dish is beef Rendang from west sumatera. Spices use for making beef rendang itself are varied from one region to another in west sumatera. Last year Gordon Ramsay intentionally came to Padang and learned how to cook beef rendang from local. the recipe that Gordon adopted was from padang (city) but in other region in west sumatera such Minangkabau and payakumbuh may use different spices. but both rendang are authentic from west sumatera. other famous dish from Indonesia is gudeg originally from central java, same as Rendang, each region in central java may prepare it differently using slightly different spices. Wish more people in the US visit our country and travel around trying different local specialties in each different region. From the bottom of my heart thank you for appreciating our cuisines.

    The first guy's English accent is so Dutch. Yes that's so true. When I lived in NL, you'll find 5 or 6 Indonesian restaurants in every city there. Just in case if you visit the Hague, please go to Elisa Restaurant.

    Surprisingly dutch guy is quite excited about our cuisine bcs they've came here and colonise for spices and made the biggest company in the world and one of richest in history, indonesia once ever be central of spices where europeans and american is import spices from indonesia in the past we had a great majapahit empire who also called as spices kingdom indonesia is al about spice taste we mix it and makes it so beautiful and taste so spectacular

      Bala bala is from Sundanese language, "Bala" mean "messy"
      cuz if you look at Bala bala the carrots and cabbage looks messy on it.
      but also Batavia or jakarta people have something similar, the name is Bakwan but the different is they have shrimp on it
      so Bala bala is not from "Bali Bali" ^^,

    Well, actually only Javanese Food is on the sweeter side. Concerning the spicyness, again javanese food is not all to spicy otherwise you want it to be, but other parts of Indonesia like Sumatra or Sulawesi have very very spicy food. Actually all the rest of the country are definitely not on the sweeter side.

    there are actually many many more local Indonesian specialties from different regions that foreigners start to notice and try when they visit or live shorly in our country. If I may suggest to the owner of Krakatoa Restaurant, please do come to Indonesia whenever possible to try at least the most famous staple food of most visited regions.

    And not just nasi goreng but Thailand also giving name to their "rempah-rempah and food" with Indonesian's name.
    Indonesia also has Sambal. the other country like Sri Lanka, Malaysia and Australia. That country called their souce with "sambal" too

    You've interviewed the wrong man lol. He's not representing Indonesian food but Indonesian-Dutch food. Indonesian food that is adjusted to the Dutch taste pallet (sweet, sour, not overly spicy, saucy). And the Indonesian food in the Netherlands is mainly based on the Javanese cuisine. Rijsttafel is a Dutch invention.
    I do like the concept of the restaurant how it's fused to look pretty for our eyes.
    6 feet under was very unusual to me, but I want my "jus alpukat" to be served that way, it looks weird yet awesome.

      This is the US and who brought Indonesian cuisine to the americans first time in the 1950's? The Dutch and Indo Dutch immigrants! Left Indonesia to the Netherlands then to the US. In the state of Florida Dutch restaurants serve Indonesian food like sate, Semur (smoor), lapis legit (Spekoek), etc. So not surprising that americans having italian pizza and spaghetti as daily food, as the Dutch having Indonesian food as their daily food. So, not surprising they are having a Dutch on this show.

      we're talking about authentic local indonesian food & drink not a package drink like teh botol. the authentic indonesian drink is tea and coffee prepared from dried tea leaves/ coffee granules so called kopi tubruk. pls differentiate between behaviour and authenticity.

    Thailand also giving name to their fried rice with "nasi goreng" because Indonesians nasi goreng were booming and delicious. So that many people think that nasi goreng from Thailand but in reality, nasi goreng from Indonesia

    34 provinces and 1400 islands.
    U can go raw from something extreme like eating worm, intestines to much more refined and tasty such as rendang and gulai.
    And i also recommend babi panggang karo from north sumatra. Ikan arsik.
    There's no end to list tho not to mention cookie and dumpling

    Indonesia and malaysian food are rich in flavor compare to Thailand or Vietnam. Because it use spices and traditional natural seasoning paste (candlenut, coriander seeds, garlic, shallot, ginger, tumeric, galangal, tamarind etc)

      @@juliawatisugiono right , in indo jus alpukat is served simpler n healthier with whole avocado fruit+ sugar/condense milk + ice cream on top. No added dairy/chemical cream oreo or other fruits . Only REAL whole avocado fruit👍
      Im just curious about this dessert , altho surely contains more chemical & less healthy than ours😀

    The best thing eat Indonesian Food in Indonesia is TEH BOTOL .. Not beer hahahaha. And the fritters in Indonesia was many kinds, either use shrimp, tofu, tempe, small fish, corn etc. And for vegie frittersz we call it "Bala Bala" not Bali Bali. Also Bali was a part of Indonesia, it was one of province among 34 provinces in Indonesia.
