I'd like to see a good transcript of this talk. It is filled with talking points that apply not just to the central thesis. There are pearls of life wisdom that may be applied as tools for thought on many issues. This is quite unusual.

On the subject of antibiotic resistance, iodine is an essential nutrient which kills many bacteria and they can NOT develop resistance. I read about an experiment done feeding cows different items, one contained iodine and the cows LOVED it...they know what's good for them.

Dr. Ballerstedt, if you like the "big horses," and production methods that completely contain and re-purpose their own waste streams, I would like to suggest you take a look at nuclear power. It is the only method of producing power that is not only required, but would voluntarily choose, to contain its own entire waste stream -- a stream of "waste" that really is anything but, and can be Recycled and Re-used to make more power and also Reduce (the three Rs) the final amount of unusable residue.
I realize this is largely off-topic of this presentation, but I would be happy to chat with you about it if you will be joining us on the ship this May.

Very frustrating to try to understand several of Ballerstedt's slides, especially when he never explains or even mentions terms used in his equations in his "Emissions" slide, like DM, and DM above, and DM below. In the same vein, if he's going to the trouble of putting a lot of information into a slide that is a major argument of his thesis that raising cattle helps reduce carbon emissions, the least he could do is go through each line in the argument ("Emissions" slide). In other ways the presentation is interesting.

Polo: I found a Chrome extension called "Audio Channel" which has a feature to run the stereo channels together into mono so you can listen to these videos that feed all the audio into the right or left channel in both ears.

I question Peter's continual promotion of Annual Grasses. Is he being paid by seed producers? Perennial grasses streesed by well managed mob grazed ruminants sends down root structures as much as 30 ft. deep. I really enjoyed this video but question various statements that aren't factually correct. I eat ducks, geese, and chickens. My primary protein source is beef. I get my omega 3 from wild caught oily fish very low on the food chain. Salmon? Not any longer. I used to eat wild caught salmon but moved liwer on the food chain. Herring and Sardines are my fish choices.
I Do Not Eat ANY Plants. .

Calling all meat processed is disingenuous. Everyone knows what processed meat is and it is bad for you, regardless of how bad other foods also are. Just because bread and sugar is harmful it doesn't mean that processed meats don't give you cancer.

I have searched and searched but all I can find are studies that basically prove processed meat doesn’t cause illness. The associations these studies show are orders of magnitude smaller than would needed to show causality. Some studies show zero association, a;though they get ignored for obvious reasons.

Arg ... 38:45 too much cutesy not enough explaining ... it appears you say the grassland (26%) can't grow crops, but then you follow up by saying 70% of current crop land is grassland. Is the 'can't' then the can't of 'can't because we've used all the grasslands amenable to being crop land'... the remainder is just too ... IDK ... rocky? These talks, if they're going to be useful to laymen, have to be better documented and the evidence has to be clearer. What exactly is the evidence showing? How much CO2 could be sequestered by converting crops to grass? (How dangerous would that be, since we can't decrease CO2 below 250ppm safely?) Etc.

Liked another vid, beef= health food, but this one is some junk.
Sounds more like anti human caused climate change. You spend no time on poor utilization of energy (gas/diesel) which extends further into tar sands vs sweet crude, which is more outta balance than your horse logic.
45:00 your efficiency argument doesn't hold up. Fewer animals to achieve the same meat weight doesn't matter if they are taking longer to get there.
Da fug you talking about with antibiotics in humans being the concern? Industrial ag uses like 80% of the supply.
Another da fug on the e coli? My area is in the 1% for cattle, but the explosion of e coli in the river im no longer supposed to swim in (per e coli count) coincides with explosion of cafos within the watershed.

Ecology/environment (whichever you decided was more neutral) was not included in you talk. When i look at equitorial regions i see a lot of desert that was not so long ago capable of supporting much life. When you spoke of the 640# of retail from the 1300# animal you specifically said nothing as to where that goes. To what degree is toe to tail practiced? Many items that were animal based are now replaced with synthetics; can we get some enlightenment on that? Is that all because of peta? I may not believe to the degree of moneyBills Nye in human induced c.c. but you make a poor case to the contrary. Driving $500000 machines that dont meet industry standards fives down the line to run a profitable "forage based" cattle operation meets none of your requirements laid down at the beginning of your presentation.
Runaway economic gains by suits and advertisers vs the indentured lifestyle by the surfly farmers was not adressed in your economic portion.
Why do you get to extrapolate datum into the future while AlGore-ers cannot?
If you didn't mention this because of other speakers why were you there to preach to the choir about fertilizers being good? Maybe you're there to help farmers believe they aren't being led to slaughter or servitude by telling them their bankers' approach is more valid than cows eating grass directly. Cause the shit might hit the fan for those companies that didn't hire you if there were 10x the farmers who were empowered by their own commitment to career and believed they were proud enough to be smart instead of just overwhelmed with the bureaucracy created by the backdoor realations of regulators and fatcats.

Peter is not a climate denialist. 🙄 How you could conclude this is truly mind boggling.
