Thanks for your comment’s Ian. As for salt and pepper, I think that between the ham/bacon and the cheese there’s plenty of salt in the dish but yes do add pepper as you want, I didn’t put it in the recipe as it’s something that I prefer to add at the table. If I have extra cheese sauce left over the next day or two, I like to take some cold boiled pieces of potato and cut them a little smaller , season them really well with salt, pepper, garlic powder and a dash of paprika for a flash of colour and then fry them in bacon fat and put them in a shallow dish and add some of the spare rarebit sauce on top. It also makes an excellent sauce for gratineed cold vegetables. Thanks again for the name call.

Love rarebit on toast , if when we have this we make a large amount and next day we have poured over on leftover roast beef with chips and garden peas . Nice one Ian looks delicious
