Chef Colin has owned and operated Honolulu's most favorite sports bar: Side Street Inn! For this dish showcasing fresh island Ahi, Colin combines Olive Oil, Basil, Parmesan Cheese, Pinenuts, Garlic, Salt and Pepper to create his Pesto. The Ahi fillet is coated with his Pesto and perfectly pan seared to medium rare doneness.
