it is called throwing, or oxidating, since it is one of the "basic" methods of making a cocktail it is a must have skill, and not that hard actually if you get used to it, i usually add some extra movements to make it look more fluid (i also move horizontaly when i poour it back to the tin filled with ice)
Fantastic Tolmach! You're a big inspiration to current and aspiring bartenders! Now, when I make a drink, I look into an invisible camera to say something cheeky about the cocktail. Thanks Eugene!
You are the first bartender I have seen using the old way of shaking drinks by pouring the liquid at great height difference between each tin, as described by David Wondrich in his book "Imbibe". Can you tell me what the advantage is of using this technique? Thank you for great video content, I learn so much from it!
I would love him to reply to this comment to share his insights, but there are a few reasons for that. It chills it by "rolling" the cocktail between the shaker tins. Shaking a cocktail, especially with gin, can "bruise" the liquor and hurt some of the flavor notes at the top of the palate (herb, citrus, etc). Rolling it prevents that but still gets some of the aeration that you would get from shaking and leaves no ice chips. It also looks damn cool. Tolmach is an amazing bartender who clearly cares a lot for the profession.

Neo Roman0 more oxigen, it means better “release” of the flavours, less water
