    Hi from South India! I've stopped crying while peeling onions, (and I must say onions we get here, in tropical city, really sting,) because I found that dropping them with the tops and bottom sliced off, in cold water, works for me. And I continue to halve them,and drop them back into water. Only smiles.

    R you going to cry too! I find you very gracious. I am a woman who stores the onions in the refrigerator then when I cut them, no crying. Works for me. My husband and I raised eight children I cried a lot. (Try a food processor too!) carmelizing onions delicious!!!

      Row Deo it is so delicious! Keeping onions In the fridge before chopping sounds like a good idea, hopefully more onion marmalade and no more tears 😂
      With 8 Children, that would be a lot of onion chopping for onion marmalade, thanks for your tip.😊

      I put them in the freezer for about 20 minutes (I'm also very sensitive to them), no issues!

    Hey neighbor boy glad springs here my fav part of the year it’s been a lovely start to spring been very busy over the hill here getting veggie patch ready lambs and calf’s doing well I ended up with a great healthy lot of babies now all my chicks have started hoping to go to violet town market for next one there hope you are well 😀❤️🌈🌈🌈🌈🐝🐝🐝

      It’s been busy here too, I think it feels busier than usual because we were all sick and out of action for a good month (note to self- remember your daily fire cider shot) and so there is healing and plenty of catching up being done, while not pushing too hard, oh the fine line. 😆
      I was wondering how your chicks were and so much new life on your side of the hill, got to love Spring.
      I hope you got some rain in the last 24 hours, I know we needed it badly and assume it is the same there.
      We just got 8mm, so I’m happy with that, every drop is wonderful.
      I probably need to do an update video of the food garden and poultry shenanigans.

    Great job, Ellissa! This recipe is awesome! You did an excellent job with your canning, too - You could very well teach others. This past week I found chicken leg quarters and sweet potatoes on sale, and got them all nicely canned and put up in the pantry. Anyone that's on a budget and/or grows a garden should learn to pressure and water bath can - After the initial investment in equipment, it pays for itself and saves so much money in the long run.

      Yes, yes, yes! I totally agree, canning is a wonderful way to make use of home grown, foraged and specials and you don’t have to defrost to cook or have rotten, wasted food.
      Well done on your chicken and potato specials and I know they’ll be delicious. Canned chicken is one of my must haves, it’s so delicious.

    Oh my Elissa, that looks yummy. I wear swimming goggles if I'm going to cut lots of onions by hand ....or I pop them through my kitchen aid grating attachment (or any food processor will do) - makes it sooooooooo much easier and faster! Beautiful video to watch as always, thank you xx Cathi xx

      Little Garden Big Dreams hello Cathi, I don’t have an electric gadget to help (although with another 100 onions to chop, I’m reassessing this)
      I do try to have as little gadgets as possible and I’ve run out of storage space.
      The googles sounds good. My friend just gave me some onion googles and they are glamours 😂

      Hello HootOwl Holler, poor Niki has been sick and now that she is almost better, she is madly working all hours, so I had to go it alone. I know she will be disappointed but I couldn’t wait any longer, everyone needs this recipe 😂

      @@MoatCottage oh; that poor girl. I hope she is feeling better now. I keep getting notices that the flu is already in my state & urging me to take the flu shot. I will not comply! I haven't taken the flu shot in years. I don't trust it.☠

      Niki will need more time to be 100% but she is getting there.

    I have found if I refrigerate my onions overnight and chop one at a time straight from the fridge it really helps. Also having a very sharp knife helps not crush the onion making more juice come out

    I don't use a lot of onions here since I'm the only one who likes them. Will have to try your recipe. Some cooks I follow recommend the onion goggles and Mrs. V of Ourhalfacre Homestead did a review of a personal fan that typically blows toward the face but she positioned them to blow away from her face as it stopped the sulfur from reaching her eyes although she processed a lot of onions.

      Hello Jean Woodall, a fan - what a simple idea! I will try that with my next batch. My friend has given me some goggles so I have 2 new options, which is great because I have another 60 onions to slice up.
      This recipe is great for the sole onion lover, you can enjoy some easily, whenever you feel like some.

    I don't have balsamic vinegar, can I use apple cider vinegar?

      I wouldn’t. A quality baslsamic, gives this recipe a beautiful depth that makes it so delicious….worth waiting for

    when cutting onions always use a sharp knife dont cut across the onion eg/ from east to west\ this breaks open the cell structure if you cut from north to south this will help in not breaking down the cell walls and this should help you

    Cut the onions in a sink full of cold water. The cutting board floats but I just held it down with the left hand while holding the onion. Peel them under water and trim off the ends. Take them out and let them drain in a colander. Slice them in a food processor. I used a covid visor while cutting and cooking them. Not one tear. Just a little sting.

    How long will it keep in the fridge ?

      Mine can last in the fridge for months, but I only keep the one I am using in the fridge. The other not pressure canned jars go in the freezer and that works very well also.

    Made this recipe exactly. My onions didn't turn dark, so maybe my balsamic wasn't strong enough? Also, with 1 inch head space, not all of my jars sealed :( Not sure why, but I did chop my onions in fine bits. Tasty, but didn't work for me

      Hi Bonnie Lynn, I am sorry to read you didn’t have great success. There are so many varieties of balsamic vinegar, it’s like wine or cheese, it depends who is making it. We have balsamic vinegar tasting places here and the colours and flavours are so varied.
      When you say you chopped your onions up fine, do you mean more fine than mine?
      The onion marmalade keeps well in the fridge and you can also freeze the jars that didn’t work and it will taste good when defrosted.

    The oxid in the onion is reactive to water so chew some mint gum you will salivate and will curve the reaction

    Two tricks for crying....first, use "candy" onions, they don't make you cry....we can buy them in the US....second, place a piece of bread in your mouth while chopping the onion and breathe through your nose. Only think that works for me.

      Hello Stephanie Corporandy , I have not heard of candy onions here in Australia, they sound pretty good, especially if they don’t make you cry.
      The bread trick sounds interesting, I will be trying this, although I’m sure it will make me laugh If someone wants to talk to me, they may think I’m a little odd, but if I’m not crying with sore eyes, it will certainly be worth it. Thanks so much 😊
