Today I'm going to be recreating the famous Auntie Anne's Pretzels, Auntie Anne's is an American franchised chain of pretzel shops founded by Anne F. Beiler and her husband, Jonas, in 1988. Auntie Anne's serves products such as pretzels, dips, and beverages. They also offer Pretzels & More Homemade Baking Mix for those who want to make their pretzels at home.

how to make auntie anne's pretzels measurments
1 1⁄2 cups water
1 1⁄4 teaspoons active dry yeast (1 pkg.)
2 tablespoons brown sugar
1 1⁄4 teaspoons salt
1 cup bread flour
3 cups flour
2 cups water
2 tablespoons baking soda
coarse salt

You did really good on the original pretzel shape. They look really good.
As someone who works at AA’s. Im gonna tell you how it’s made.
First, the water for dough. It has to 105 temp and 6 1/2 cups of water. 1/4 yeast. Don’t know of the specifics of the flour. However, I’m sure bread flour, salt and sugar is included. Then we put it in our mixer for 4 mins. After that, we spray the bowl with vegetable oil. Put the dough in the bowl. Then cover it with white paper sheet on top for it to rise. After it rised, we spray 9 inch of oil on the area then put the dough on top of table. There has to be 181 temp and 8 cups of water for the baking soda mix. For the nuggets we just roll 10 strips for a 9 tray. It has to weigh as 120 grams. We just dipped it in the baking soda mix then put it on the tray. The we cut it. For the original pretzel. It has to weigh 120 grams as well. After you roll. You pinch each toes into a U shape. Then toss it into a pretzel. (It’s complicated to explain) the toes has to 2 inch apart. We dipped the pretzel in the BS mix and put it in the tray. I forgot to mention before we put it in the tray, we drain it first. So, it wont be too wet on the tray. We set our oven at 575. degrees. For the og pretzel, we only dipped the face of the pretzel. Brush it for the salt nuggets. Fully dipped the cinnamon in butter then let the butter drain, and fully coat the nuggets in cinnamon.
A couple of tips I can offer:
1. Use baked baking soda. Doing this raises the pH level of the baking soda to one much closer to lye and provides a more authentic texture.
To achieve this, heat some baking soda in the oven at 300° for 1 hour. Then dissolve it into water and soak the pretzels as normal using protective gloves.
2. Rather than brush the butter on, literally dunk the bites/pretzels in the melted butter. This will create more of that "butter is gushing out" experience that you mentioned. For the full size pretzels, you'll need a bigger dish and more butter to do this.

All those homemade pretzels looks so good 😊. I don't like the salt chunks either. Last time, I tried it with the salt chunks , I instantly regretted it🤮😮💨. It was too damn salty, but I didn't let go to waste, I scooped the chunks off and still enjoyed it. The pretzels taste good with either cinnamon sugar or plain. You did such a great job on the pretzels shape 👍

I had this copycat Auntie Anne's pretzels before, and they are good, but you're right, just missing a little something. The next time try as we tried, as soon as they came out the oven we dropped them in melted butter for a second or so, stirred them around a little than took them out and placed them on a rack so they wouldn't be laying in a puddle getting soggy. They tasted 10x's better than the 1st time. Now for the salt, nope not a fan of the chunky salt but I found if you put it in a bowl or something and crush ot up into almost a powder, than sprinkle a little on the pretzels you get that great salted pretzel taste without the chunk all at one time.
