    Lovely! I'd add some garam masala powder at the end and keep.covered for a while before serving. Yummy!

    Mutton Kosha - A slow cooked Bengali Style Mutton Curry - with tender mutton infused with flavours of caramelised spices and onions ❤️
    Mutton Kosha:
    Ingredients:
    - Mutton 750g
    For paste
    - onion 80gm
    - ginger 10 gm
    - garlic 10gm
    - green chillis -3-4 pcs
    - Sliced onions - 180 gm
    Whole spices:
    - 6 cloves
    - 3 green cardamom
    - 1 black cardamom
    - 1 inch cinnamon
    - 10 black peppercorns
    - 2 bay leaves
    - 2 dry red chillis
    Powdered spices:
    For marination: 1/2 tsp turmeric powder, 1 tsp red chilli powder and 2 tbsp coriander powder
    For finishing: 1/2 tsp garam masala (should have nutmeg and mace)
    - 2 tbsp curd
    - 20 gm grated papaya
    - 5 tbsp mustard oil
    - 1 tsp brown ghee
    - Salt
    - Warm water
    Preparation:
    - Marinate the mutton for 4-5 hours with : Paste, grated papaya , spices, salt, curd and 1 tbsp mustard oil
    Cooking:
    - Heat 4 tbsp mustard oil till smoking hot
    - Temper with whole spices
    - Add onions and fry over a high heat till translucent
    - Fry over a medium heat till brown
    - Add the mutton and fry over a high heat for 5 minutes
    - Reduce the flame and then cover and cook
    - For the first 1 hr of slow cooking: Story every 10 minutes and don't add any water ( Adjust salt if required in this step)
    - For the 2nd hour: Stir every 5 minutes. Cover and cook and add warm water if masalas are burning.
    - Cook till the mutton is tender and gravy is blackish brown almost
    - Finish with garam masala and brown ghee

    Mutton kosha red chilli powder, and red chilli diyo na taste and colour will be 1000 times better.... red chilli powder is just myth in indian cooking and nothing else
